So when I was in college, kettle corn was my jam. It was always there for me when I needed a quick snack. It filled me up and stuck with me through study sessions and movie nights. Am I the only one who sometimes needs something to munch on while studying/working? It almost helps me focus more. Like I’m doing something, while I’m doing something. Like I get bored while I’m doing something… so I need to do something. Ya know? Gosh. You guys totally get me.

Do you know what’s crazy? While you’re in college, there is nothing you dread more than spending hours in the library studying your life away, memorizing formulas, guzzling venti lattes, struggling to keep your eye lids propped up.

And once you graduate, you feel a sense of relief. “Thank God I don’t have to do that again”.

A couple years pass and there you are, missing those long nights in the library.

Of course you knew you would miss the fun times in college. Everybody told you you would. But I don’t think you knew you would miss the things that you once hated, am I right? I had an amazing time in college. I met the love of my life there. I have wonderful memories that I could feel myself already missing as I walked across that stage and grasped that fake diploma.

But I never knew I would miss waiting for the Park and Ride bus every morning because I lived awkwardly far from campus. Or running to class through the pouring Florida ran, arriving soaking wet and shivering through an exam because it’s Florida, we don’t need jackets and never know when it will start pouring. Or walking up and down eight flights of stairs in my dorm every time I needed to do laundry. Or the long football games where the sun was beating down and I was sure I was going to die of heat exhaustion every time.

Alas, here I am. Happy with life, yes… but part of me wishes I could go back to those times for maybe a week.

The slight saltiness of the kettle corn is perfection when combined with the sweet, crunchy milk chocolate m&ms, and the silky melted white chocolate drizzle with a hint of sour lemon.

Oh, and I found these cute little snack cups in the $1 section at Target! Great for giving to kids or to yourself to control your portion since you know you’ll want to inhale the entire batch.

Lemon White Chocolate Drizzled Kettle Corn

Ingredients
  • 1 bag microwave kettle corn, popped
  • 1/2 bag white chocolate chips (I used Ghirardelli)
  • Zest of 1 lemon
  • 1/2 cup milk chocolate m&ms
Instructions
  1. Place the white chocolate chips into a microwave safe bowl. Place in the microwave for 15 seconds.
  2. Remove, stir, and place in the microwave for 30 seconds. Remove, stir. If not melted, place in for another 15 seconds and stir until smooth.
  3. Quickly after melting the chocolate, add in the lemon zest and stir.
  4. Add the m&ms to the kettle corn in a large bowl and mix together with your hands.
  5. Drizzle the white chocolate and lemon mixture over the kettle corn.

    I also wish I could go back to college for a week. Not longer, but a week would be nice. I’m a popcorn ADDICT (seriously eat it at least 4 times a week lately) but I forget about kettle corn. So good!

    There is nothing I miss more about college than getting a giant iced coffee and bag of chips and heading to the library with all my friends for an all nighter. Take me back now plz! Now about this popcorn…this is so cute and festive. I’m making this for Sunday <3

    Nope not gonna miss college. Well not the work load and boring lectures anyway. Maybe I need to try this kettlecorn trick, it might make studying more bearable!

    Oh I totally feel you on missing random things about college! Something I miss the most- literally wearing sweatpants all over campus. So many memories/hours of camping out in the library and having multiple meals at one spot while doing homework aka facebook chatting my friends across the library haha. I love popcorn and this looks like such a good snack:)

    These are SO cute! I love kettle corn and am currently working on a Funfetti Kettle Corn recipe (Coming soon!). It’s such a great dessert or easy snack. Can’t wait to make this when I’m home — yes, I do have M&M’s on deck at all times….#sorrynotsorry.

    I haven’t even graduated yet and I am already missing certain things about college. I am on campus a lot less so I am starting to miss those long days I spent on campus between class and studying, but I am trying to take advantage of the last month and a half I have left here because once that’s over with it’s time to move on.
