Easy Gluten-Free Sugar Cookies

As a Floridian, there are two things that make me realize it’s Christmas time: Bath and Body Works evergreen candles, and Christmas cookies. Just about every year, our neighbor makes a big batch of Christmas cookies and brings us a plate. I’m not talking just one type, I’m talking at least six different types of cookies. She rocks.

And while my family has always decorated a real Christmas tree, it’s so tucked away in my house that I actually need a candle to make my room smell like pine. No shame.

Christmas movies are on tv, Christmas music is on loop, Christmas tree is lit, Christmas lights are hung, wreaths dawn our front doors, the scent of Christmas cookies envelope our kitchen… and yet, it’s 86 degrees outside.

Hey, I’m sure plenty of you that live up north are rolling your eyes right about now. I’m actually one of the very few Floridians I know that loathes the heat. After 16 years, I am just so sick of it! Can I get a drop in temps over here? Maybe a breeze? SOMETHING?

To hack my brain into forgetting about the heat outside, I’m sharing a super easy, festive cookie recipe with you all. Every year, my sister, cousins, and I decorate sugar cookies on Christmas Eve. Because I couldn’t wait until Christmas Eve to enjoy some sugar cookies, I took the liberty to make my own in the meantime.

This was actually my first time making sugar cookies with almond flour. I have to admit, I was a little anxious about how they’d turn out. Friends, I was pleasantly surprised. These cookies came out perfectly – soft, moist pillows of heaven. I promise.

For this recipe, I used Barney Butter’s Almond Flour. I love using almond flour when making gluten-free goodies because I feel it creates a baked good most similar to it’s traditional counterpart. These cookies came out super soft and moist, and you’d never know they were gluten-free. Serves: 24 cookies
Ingredients
  • Cookies:
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/3 cup almond milk
  • 4 cups almond flour
  • Icing:
  • 1 block of cream cheese, softened
  • ½ cup powdered sugar, sifted
  • Sprinkles
Instructions
  1. Preheat your oven to 350 degrees and prepare a cookie sheet.
  2. Combine butter and sugar in a large bowl and stir together.
  3. Add in egg, vanilla extract, and milk. Stir to combine.
  4. Add in almond flour, stirring, until dough is formed.
  5. Scoop equal amounts of dough, 1-½ inches apart, on a cookie sheet.
  6. Bake for 12-15 minutes, or until bottoms are golden.
  7. For icing, combine cream cheese and powdered sugar in a bowl. Use an electric mixer and combine well.

    I’m with you on the Florida heat. But hey, COLD FRONT THIS WEEKEND! And these sound delicious! My family has yet to stray from decorating Pillsbury sugar cookies, which is shameful as a food blogger lol.

    I feel sorry for you! Where I live we don’t get proper seasons either. Ours it pretty much just humid and rainy all year round. I wish it snowed here! That would make winter a little more bearable rather than grey and dreary.
