These Three Easy Salmon Dinners Using Pantry Staples are the perfect examples of simple being delicious. They each take less than an hour (most of which is roasting time), and are versatile for whichever you and your family prefer.
If you hadn’t noticed by my e-book (The Lazy Girl’s Guide to Weeknight Cooking), I like quick, simple meals. Especially during the week, when cooking dinner is usually the last thing I want to do after a long day of work.
I feel like you can kind of compare cooking after a long day to exercising when you don’t want to. You really really really don’t feel like it, but you know it’s the best option, and that you’ll feel much better after you just do it. And for times like this, when it comes to cooking under the influence of lazy, it’s important to constantly be stocked with [healthy] pantry staples. This way, you can just whip up a healthy meal because you’ve already got the ingredients.
To be candid, the last time I had a frozen dinner was my freshman year of college when I would regularly eat Lean Cuisine (vom) in my dorm room. And I’ve gotta tell you, this frozen Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper & Extra Virgin Olive Oil cannot be compared to a TV dinner (because that’s what comes to mind when I think of frozen foods). After roasting this salmon in the oven (no need to thaw), it was as though I’d picked up fresh salmon and marinated and seasoned it myself.

These Bumble Bee SuperFresh® salmon fillets are the answer to my lazy girl prayers. They were so ridiculously easy to make, and complemented the staple pantry ingredients perfectly.
So for this recipe, I actually did a little experiment. Because I wanted to show that you can eat healthy and make easy recipes with what you’ve got, I didn’t even plan or go grocery shopping for this recipe. I did what I normally do on a weeknight: sift through my pantry and refrigerator, find what works together, and throw it all into a recipe. Each of these came out perfectly, and I am definitely adding them to my weekly rotation.
Here’s what I whipped up…
Salmon with Zucchini Noodles and Sweet Potato Fries
- 1 fillet Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper & Extra Virgin Olive Oil
- 4 tbsp extra virgin olive oil
- 1 sweet potato
- 3 zucchini squash
- Salt, to taste
- Pepper, to taste
- 2 cloves garlic, minced
- Pre-heat the oven to 400 degrees.
- Chop sweet potato into steak fries and lay across a baking sheet.
- Drizzle with 2 tbsp olive oil, salt and pepper (to taste). Place in the oven and set timer to 25-30 minutes.
- Meanwhile, using a spiralizer, spiralize zucchini into noodles.
- Add garlic and 2 tbsp olive oil to a large saute pan over medium heat. Saute garlic until just barely golden.
- Add in zucchini and saute for five minutes. Turn off heat and cover.
- When sweet potato fries are done, turn the heat of the oven up to 425 degrees.
- Remove the fillet from its plastic pouch and place into the parchment pouch provided in the box.
- Place on a baking sheet and bake for 22 minutes, or until soft and flaky.

Salmon Egg Scramble with Zucchini Noodles, Shredded Carrots and Avocado
- 2 eggs
- 1 fillet Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper & Extra Virgin Olive Oil
- 2 zucchini, spiralized
- 1/2 avocado
- 2 tbsp extra virgin olive oil
- 1 tbsp lime juice
- 2 cloves garlic, minced
- Salt, to taste
- Pepper, to taste
- 1/4 cup shredded carrots
- Preheat the oven to 425 degrees.
- Remove the fillet from the plastic pouch and place into the parchment sleeve.
- Place onto a baking sheet and bake for 22 minutes.
- Meanwhile, add olive oil and garlic to a large saute pan over medium heat.
- Once garlic is just golden, add in zucchini noodles and saute for about five minutes.
- When zucchini is finished, crack eggs into a small bowl. Whisk to scramble.
- When salmon is finished baking, remove it from the oven.
- Add eggs to a small saute pan over medium heat.
- Cook for about two minutes. Add salmon fillet and, using a fork, break fillet up into the eggs.
- Mix together and serve over zucchini noodles with avocado.
- Drizzle with lime juice, olive oil, and sprinkle with salt and pepper. Add in carrots for an extra crunch!
Salmon with Roasted Asparagus, Grape Tomatoes, and Sweet Potato Fries
- 2 sweet potatoes
- 1 fillet Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper & Extra Virgin Olive Oil
- 12 spears asparagus
- 1 cup grape tomatoes, halved lengthwise
- 4 tbsp extra virgin olive oil
- Salt, to taste
- Pepper, to taste
- 1 tbsp lemon juice
- Pre-heat the oven to 400 degrees.
- Chop sweet potato into steak fries and lay across a baking sheet.
- Drizzle with 2 tbsp olive oil, salt and pepper (to taste). Place in the oven and set timer to 25-30 minutes.
- Lay asparagus and grape tomatoes across another baking sheet.
- Drizzle with olive oil and salt and pepper.
- Place in the oven when the fries reach 20 minutes left.
- When sweet potato fries and asparagus are done, turn the heat of the oven up to 425 degrees.
- Remove the fillet from its plastic pouch and place into the parchment pouch provided in the box.
- Place on a baking sheet and bake for 22 minutes, or until soft and flaky.
- Squeeze lemon juice over asparagus before serving.

I rely on frozen salmon/other fish and veggies to keep me from resorting to Amy’s meals after long workdays. So easy to broil the fish and steam veggies in 15 minutes!

YUm these look great! I’ve got salmon on the menu on Friday, might whip up some sweet potato fries with them! My go to meal after a long day at the moment would probably have to be something easy like fried rice! Using microwave rice, frozen peas and a few other bits and pieces! thanks for sharing
