Zucchini Noodles + Shrimp, Chorizo & Chickpeas

Sometimes I am so inspired to create something in the kitchen. Especially since my cooking has been more rare than usual lately. When I get the chance, usually on weekends, I take advantage of my downtime to let my creative juices flow. This instance, however, our house was not fully stocked with fresh ingredients, and I had ZERO desire to get in traffic and bob and weave between people at the grocery store.

I am really bad at taking inventory before grocery shopping. So, whenever I go, I almost always get back and realize how much I actually had stocked in the kitchen. Most of the time, my trips to the grocery store could’ve probably waited a few more days. Sometimes you just want to buy some food, ya know? Or maybe that’s just me.

Being that the thought of grocery shopping disgusted me, yet I was really feeling inspired to cook something tasty, I gathered whatever we had in the kitchen, and came up with this concoction.

I got lucky, however. Sometimes all I have is oatmeal and lettuce. Then, other times, like this instance, I had some fresh zucchini, rummaged through the pantry and found some canned garbanzo beans and two links of chorizo (normal pantry items…), a package of heirloom grape tomatoes, a red onion, and a bag of frozen shrimp. I was ready to cook.

    Nice! I love spiralized veggies and make several things a week out of whatever is on hand. So far, no complaints. Even had guests ask what brand of noodle I was using in a cold Asian-themed salad – they didn’t realize it was spiralized cucmber

      HA! No way that’s hilarious! I love spiralizing cucumber, it gets so juicy and adds a refreshing flavor to whatever dish it’s in!

    I’ve been pulling meals out of my pantry for years. They are usually the best. That being said, since we became empty nesters my inventory has dwindled to nothing…I think it may be time to go to the grocery store! Thanks for sharing via #TBB #LinkLove
