Gluten-Free White Chocolate Banana Muffins

These easy Gluten-Free White Chocolate Banana Muffins are a wonderful option for on-the-go breakfast days, or even a snack to quench your sweet tooth cravings.

It is such a wonderful thing to be busy. Of course, it may not feel like it, but looking at things from the big picture, being busy is actually a positive thing.

Being busy means that you have something going on to focus your energy on. It means people trust you, believe in you, value your talents and skills, and choose you to get a job done for them. I, for one, am a person who thrives off of being busy. BUT, I’m actually hot and cold at the same time. When I’m super busy, I get really stressed and just hope and pray for a Saturday where I can just veg on the couch and eat peanut butter all day. But when a day like that comes around, I JUST GOTTA DO SOMETHING. Rare are the days where I can sit still.

So if that day does come, I’ll melt into the couch for a couple of hours, and then I’m over it. I’ve gotten my vegetation out of the way, I’m ready to be somewhat busy again. Basically, my brain makes no sense.

But of course, as with everything in life, balance is key. And, hindsight is always 20/20.

Recently, my grandparents were in town for a couple of weeks. Coincidentally, those couple of weeks happened to be probably the busiest I’ve been in a while. Everything was happening all at once.

The startup I work for is growing FAST (which is freaking awesome). Startup life is crazy because literally in one day your entire schedule and life can change with one investor decision or new partnership. My company had a monumental partnership launch coming on May 9th (which was a last minute thing, and I was frantically getting everything together) which was coincidentally the week Georgie, Rachel, and I launched our Influence with Instagram e-course, and I was working with Eggland’s Best for five exclusive recipes and a week-long Instagram takeover. This is all one week, and being the anxiety-ridden individual I am, I was in need of a big fat chill pill.

In between all of this, I was missing out on spending quality time with my grandparents. Everything that was going on and keeping me busy was all positive, thankfully. But once they left, it made me realize that, although everything happening all at once like that at the exact time that they were here was sort of a fluke, it’s so important to find a balance for yourself between work and life, whatever that means for you (because we all handle it differently). For me, it means when things get really crazy, I still have an understanding of what is really important.

I do have a hard time letting myself relax and believing “it will get done”. And while I still struggle with this, I do believe I’ve come a long way since the beginning of last year, when I was just getting used to the startup life and put an enormous amount of pressure on myself.

Baby steps… baby steps.

Back to business: muffins.

Funny enough, I made these muffins while my grandparents were in town. My grandfather, a big time foodie and TBB taste tester, absolutely loved them. The two people I always try to impress are my grandfather and my father. So if I ever mention that either of them liked a recipe, you know it’s a good one.

White Chocolate Chip Banana Muffins

Gluten-Free White Chocolate Banana Muffins
Recipe Type: Dessert

Serves: 12 muffins
Ingredients
  • 3 bananas, mashed
  • 1/4 cup brown sugar
  • 1 1/2 tsp vanilla extract
  • 2 eggs
  • 2 tbsp vanilla Greek yogurt
  • 1 1/2 cup chickpea flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1/2 cup white chocolate chips
Instructions
  1. Preheat your oven to 350 degrees and prepare a muffin pan.
  2. In a large bowl or stand mixer, add mashed bananas, brown sugar, vanilla extract, eggs, and Greek yogurt. Mix until well-combined.
  3. Add chickpea flour, baking soda and cinnamon. Combine.
  4. Fold in white chocolate chips. Combine.
  5. Pour evenly into muffin pan.
  6. Bake for 20-25 minutes, until a toothpick comes out clean.

    I like being busy to a certain extent, but I totally hear you about needing a chill pill after that period of busy time is over. I know I get anxious when I’m not doing anything because I feel like I should be doing something, but I’m trying to be better about actually enjoying this time now before next semester’s craziness!! These muffins looks glorious!

    Christina these look PERFECT. Love that you used white chocolate chips! So fun with the banana.
    I definitely like being busy because I find I can process what needs to happen better. I can have a set list of priorities and GSD. But then at times I feel overwhelmed and like you said, need to remember to take things one day at a time.

    Totally on your page that when I am running around like a crazy person I’m dying to relax and then when I’m relaxing I feel the need to do something immediately. My fiance thinks I’m nuts. Cant wait to try the muffins!!

    I’m sort of the same way… I love being busy, but I’d say once a week I need a day to just chill. Not for the entire day of course because I can’t, but a slow morning or an evening to do nothing but watch TV. The best. Also, banana twins today!

      It’s been hitting me hard lately since I work full-time then have to work straight through just about every weekend. So I’ve really been trying to focus on taking time for myself whether it’s after work during the week or what!

    When I was in college I needed to be busy or else I would get homesick. Now, I’m enjoying this busy-free stage of life. I’ve admittedly always been pretty darn good at relaxing and vegging on the couch, so if you ever need help, call me :) I know May was stressful, but you have a great perspective: it was filled with GOOD, exciting things!

    I always say that I wish I wasn’t so busy but then when i’m not, I wish that I was busy again haha. So I guess I love being busy, at least when I’m busy with something I love doing. These muffins look delicious! The combo of banana and white chocolate has to be one of the best ever <3

    These look beautiful! I prefer to have a good balance between business and down time, I’m a bit of a stresser too so I need to learn how to not try and do everything at once! Fav muffin combo would def be raspberry and dark chocolate!! Think I’ll be on my way now to make me some muffins!

    I definitely like being busy most of the time. But I can definitely hit a wall where my body demands I take downtime. The banana/white chocolate combo going on here sounds bombtastic. I need to try chickpea flour!

      Saameeee. Sometimes I even physically feel my body telling me to chillax. I tend feel this sort of exhaustion that’s almost fever-like, and that’s when I know I need to slow my roll

    I am totally the same way! I thrive off being busy. However, I also need some serious down time every now and then. This could mean a few hours of just me time on the couch or a hike/walk by the beach. Either way, my brain and body need a chance to shut off and recover from the stress. My favorite muffin combinations are zucchini chocolate chip and banana chocolate chip :) I love chocolate, clearly haha

      If I lived near the beach (as opposed to an hour drive away) I would be there all the time to unwind. When I lived in Pensacola for my internship I was 5 min away, so i went there allll the time just by myself to sit on the sand and chill when things got crazy!

Life can get crazy tough and working through it can feel amazing, but I’m starting to learn that allowing myself to have some downtime may just be OK. My blog won’t crumble if I take the week off 😉

    These muffins look incredible. Banana muffins are some of my all-time favorite baked goods :) Can’t wait to try these!

      In the beginning of all of this I felt sort of invincible because I could work work work and never feel like I needed to stop, but I’m getting to a point where the days off are actually necessary! It’s definitely not sustainable and I’m learning that!

    I can’t wait for the university break but it always feels so weird when you are not busy anymore. You forget what it feels like to relax and not feel tense and stressed out all the time! My favourite muffin flavour is banana, chocolate chip…so you did well 😉

    Right. Definitely making these tomorrow! And maintaining life balance is hard! I yo-yo between doing-it-all and seeing everyone then succumbing to exhaustion and shutting off for a bit (I don’t like those times). I’m getting much better at it but I have to think about it and know where I am.

    I guess there are different kinds of busy for me, because some ‘busy’ feels really overwhelming, and it makes me just want to dig a hole and go cry. Other forms of busy enliven me and energize me. It’s SO crazy how that works, but if I’m not doing anything, I do want to do something, but I usually have to find the right thing. The things that I really love to do for others and feel really fulfilled doing are probably cooking, writing, and interacting with other bloggers and my family. I would be terrible at a busy that meant I had to travel all the time for work, although I love to travel for vacation. I’m kind of an odd duck I guess. And these look so good… Right now, I’m kind of tired and craving one of these muffins so much. :o)

      You’re not odd, I totally understand!! With my first job I was so busy going different places every day and doing a million things for something I had no passion for – thats the kind of busy I hate!
