My alarm goes off at 4:30am. My eyes slowly unlock from their slumber and open to a dark room awaiting my energy. I think about the day ahead and groan in irritation. “Do I really have to put pants on and do adult things?” I ponder. The answer, day after day, is yes. *cringe* … “Get up”, my brain implores. I whip my head up reluctantly, pull my legs around, push my covers off, and plant my feet on the ground. My day has officially commenced.

My eyes feel as though I’d gone sleepwalking straight into a door. They’re puffy, tired, I’m exhausted. I hover to the kitchen and pour myself a cup of coffee to enjoy and awaken my zombie mind while getting ready for work. I quickly brush my teeth, brush my hair, and go through the morning’s rituals. I realize time is moving faster than I, so I quickly dress and gather my things. I scurry back to the kitchen to assemble my breakfast and lunch into my “lunch box”, accompanied by an ice pack.

Into my lunch box goes two muffins for breakfast, a sandwich and a few snacks for lunch. A coffee and water bottle occupy my hands as I scramble to leave and lock the door. It’s pitch black outside, the neighbors are asleep, and I’m off to bring home the bacon.

It was impossible for me to be unprepared with my meals each and everyday. In order to avoid eating once-frozen Starbucks sandwiches or McDonald’s bacon, egg, and cheese everyday, I put the effort in to prepare my week of breakfasts every single Sunday. I had a cycle of favorite recipes to prepare each week, and this process made my mornings that much more smooth. Having such an early start-time and a job that required driving all day, my breakfasts had to be three things: 1) already prepared, 2) easy for me to eat in the car, and 3) delicious. I refused to sacrifice my favorite meal of the day for my job.

Being a homebody that enjoys that morning time of silence and solace, that relaxation before the day starts when the coffee is strong and the world is calm, I was devastated to find out that my morning routine would change indefinitely with my demanding job. I had been purposefully waking up an hour and a half before I was to leave the house each day so that I could revel in my morning serenity and enjoy my breakfast leisurely before the buzz of the biz. A new job that required me to walk in to my first location by 7:00, 6:00, sometimes 5:45 AM, flipped my world upside down.

I wallowed in self-pity at first, but I soon became a champion of the meal prep lifestyle. I loathe feeling unprepared or rushed or stressed. Preparing everything thoughtfully and with a plan helped calm my nerves, and resulted in me still enjoying my meals despite being in a moving vehicle 90% of the time.

That is why I created The Ultimate Guide to Breakfast On-The-Go. I want to help anyone that is less-than-thrilled with their morning routine, because that’s not the way it should be. Food should be enjoyed in every instance. It should bring a smile to your face and your tastebuds and your stomach. Your mind should be grateful for every bite. Oh, and it shouldn’t be a pain in the butt.

A hard worker at my core, the kitchen is a catalyst to my deep, underlying lackadaisical nature. Simplicity in cooking is my motto, and I carry that through every facet of my culinary world. I will put in the effort to prepare meals for the week, but they’ve got to be simple. I exert energy to plan and prepare my weeks food, because I know during the week, my life will be made easier (but still delicious).

I am so excited to be sharing this with you today. I have poured my heart and soul into this eCookbook, and I’ve done so with each and every one of you in mind.
