One could say I am irrationally excited for the Fall season.

I’m not sure if it’s because it’s the first year I’ve really just plowed through the Summer with my head in my work, or because I just simply want all of the Fall food already. (Like this Sweet Potato Bread!) But what’s ridiculously ironic about my desire for Fall to just get here already, is that four days after Fall begins, I’ll be on a big cruise ship in the Caribbean enjoying my Summer.

Funny how life works.

What does the Fall season remind you of?

For some reason, Fall always brings me back to experiencing the season in college. The University of Florida campus is so gorgeous and the weather in Gainesville is perfect during that time of year. I can’t even explain it; it’s just a special feeling you get when the seasons change. It brings me back to memories with Christian and our friends. We would enjoy football games, then all walk back to him and his roommates house where some of the girlfriends’ and parents got together and made a smorgasbord of food. We’d all enjoy our meals while watching the rest of the days games on TV.

Even when I worked in food sales (my first job out of college), everything was rushed for the holidays. You know how you go to Target and you see Halloween-themed products already on the shelves in August or September? That’s exactly what I mean. We’re always thinking forward when it comes to business… hey, even with blogging. It’s August and I’m already pondering what recipes to make for Christmas! No wonder I’m so stoked for whichever season by the time it arrives.

Now, this Sweet Potato Bread. You guys… I’m kind of sad because it was gone so quickly. I want MORE. I feel like it’s the perfect way to enjoy Fall when Fall hasn’t even arrived yet. It’s not pumpkin, so it’s technically *not* a Fall treat (because is anything a Fall treat if it doesn’t contain pumpkin? Kidding.), but… it is. Know what I’m sayinnn?

Sweet Potato Bread

Serves: 10 slices
Ingredients
  • 1 3/4 cups all-purpose flour
  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup coconut oil, melted
  • 2 eggs, beaten
  • 1 cup cooked, grated or mashed sweet potato
  • 1/4 cup almond milk
Instructions
  1. Preheat your oven to 350 degrees.
  2. Combine dry ingredients in a large bowl (flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg).
  3. Add in coconut oil and eggs and combine well.
  4. Add sweet potato and stir together until well-combined.
  5. Add almond milk and stir. If batter is too thick, add milk by the 1/4 cup until desired texture is reached.
  6. Pour batter into a greased loaf pan.
  7. Bake for 45-50 minutes.
Notes
If you’re wanting a stronger spice flavor, you can try cardamom, cloves, and/or pumpkin pie spice.

    Ooh, this looks really good! I’m not a big sweet potato fan, but I love sweet potato brownies and pumpkin pie so I’ll definitely give this a try!

    Food-wise, fall is definitely my favourite season. Warming spices, apples and pears, I love it! Life-wise, winter was always my favourite season growing up in Canada, but here in Scotland winter tends to be wet and windy, so I think fall’s my favourite, because the bright leaves and crisp air always make me look forward to that elusive snow XD

    Omg I’m so ready for pumpkin/sweet potato season! This bread looks BOMB. Fall reminds me of cross country season, crisp air, and lots of apples. :) Not a huge football fan, but I can’t believe it’s my senior year of college!! CRAZY.

    Love that picture of you two :) Fall is my favorite season, but I tend to like the beginning of every season. By the end I’m ready for a change but with the end of fall comes Christmas so the entire season is good. Plus the food! Like sweet potatoes, cinnamon, apples, slow cooker. All good stuff. We just have to crank up the AC a bit more down here to pretend it’s cold out.

    ooo0oooo i’d love to slather some butta on dis bread. totally takes away from any health benefits, but i’m a sucker for the stuff. i’m super excited for fall too! not that i don’t love summer but something about fall is just so gorgeous!

    Wow this sounds amazing! I am really looking forward to Fall, even if we don’t get much of the season changes here in Tampa, Florida. Sometimes I wish I lived somewhere with real seasons, but at the same time I love my sunny weather!
