Today I was thinking about my hair. An old photo came up on my Timehop of me trying on bridesmaids dresses with my sister for her wedding. At the time, my hair was super short.

My whole life my hair has been decently long. I remember a time in college when my hair was just about to my low back. I was always known for my long locks, and everybody always old me to never cut it. Which is why I guess I’d cut it…

Oh, and also because we live in Florida and it’s hot as hades and long hair at outdoor Gator football games was getting pretty miserable. But that’s besides the point.

I was looking at this photo, and I instantly missed my short hair (as it’s grown past my chest now). My hair typically grows like weeds, but for some reason, this time it’s taken forever. I’ve been impatiently waiting for my long hair to come back, and just as it’s about to be back to it’s full length, I’m missing my short hair. This got me thinking about how easily bored I become with things in my life. Like…

  • Work: That’s why I love this blog, because I can constantly change and morph things to my liking. If it weren’t for this blog fulfilling my creative passions, I’m not sure what I’d do. While I haven’t had enough experience in the corporate world to realize what I like and don’t like, I have realized that unless I am insanely passionate about something, I become easily bored.
  • TV: As some of you know, I’m a reality tv junkie. But I become so bored if I watch tv for more than about two hours. Sometimes I have days where I force myself to do nothing and step away from work, so I lay on the couch and watch tv. My God do I become ill with boredom.
  • Routine: Okay, I’m extremely routine-oriented. But, like the true millennial I am (cringe), I become bored with whatever routine I’m immersed in. When I had my field sales job, I got sick of driving from customer-to-customer everyday. Now that I’m remote, I get sick of being home all the time. Wow, I’m annoying.

And of course, hair. It really is true: you want what you can’t have.

But I’m on a quest, people. I’m on a quest to genuinely, truly appreciate what I have in every moment. Instead of yearning for my short hair again, I’ll love my long locks and enjoy them as they are. Instead of simply becoming bored with work, I’ll find new ways to be creative and propel myself forward. Instead of whining about whatever routine I’m in, I’ll find ways to switch things up.

So what do I not get bored of?! Um…

  • Boyfriend: I don’t get bored of my boyfriend, so that’s good, right?
  • Family: Because they’re crazy (in a great way).
  • Food: FOOD IS AMAZING.
  • Exercise: Actually, okay, this is kind of both, because I have to actively switch up my workouts or else I do get bored!

That’s all I can think of right now, but you guys get the point. There are things we get bored of, and things we enjoy for eternity without an ounce of restlessness. Why not take those things that bore us and turn them into things that make us smile?

I’ve been thinking about this a lot lately, how everything in life is about your mindset. It may not feel like it, in fact, it absolutely doesn’t feel like it, but everything is about how you look at life.

One thing I’ll never get sick of? Roasted vegetables oozing with juice and flavor. Like these!

This is by far my favorite way to eat vegetables. They soak up all of the yummy juices in the oven, and absorb the fumes from each different ingredient. Not to mention, it’s ridiculously easy to just throw a bunch of chopped veggies and whip up an oil-based sauce to douse them in.

This bowl contains roasted…

Red onion

Sweet potato

Carrot

Chickpeas

and sauteed kale as the base.

I whipped up a marinade of sorts to pour over the vegetables before roasting, which amplified their already delicious flavor. Then, I mixed together a tahini dressing to top the salad off with before enjoying.

Roasted Veggie Buddha Bowl

Serves: 2 bowls
Ingredients
  • 3 large carrots, peeled and roughly julienned
  • 1 sweet potato, peeled and cut into chunks
  • 1/2 red onion, cut into chunks
  • 15 oz canned chickpeas, drained and rinsed
  • 1/2 + 2 tbsp cup extra virgin olive oil
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 clove minced garlic
  • 5 cups chopped kale
  • 1/4 cup white wine
  • [b]Dressing:[/b]
  • 1/4 cup tahini
  • 1 tbsp honey
  • 1/4 cup extra virgin olive oil
  • 1 tsp salt
Instructions
  1. Preheat your oven to 400 degrees.
  2. Lay vegetables and chickpeas out on a lined baking sheet.
  3. Add 1/2 cup EVOO, cumin, garlic powder, salt, pepper, and minced garlic to a liquid measuring cup. Whisk together and pour over vegetables. Use tongs or your hands to completely mix veggies with oil mixture.
  4. Place in the oven and roasted for 30 minutes.
  5. In the meantime, heat 2 tbsp extra virgin olive oil in a large skillet over medium heat.
  6. Once oil is hot, add kale, salt, and white wine. Saute until kale is wilted.
  7. Add dressing ingredients in a liquid measuring cup and whisk to combine.
  8. Remove vegetables from the oven.
  9. Place kale as base into bowls, then top with roasted veggies and chickpeas. Drizzle with dressing and enjoy.

    Yum. Roasted vegetables are my fav (eat them almost every day!). But I feel ya on the boredom/wanting to switch things up dilemma. I spent YEARS growing my hair out, and then what did I do last month? Chopped it! HA! But I really love it. I go through cycles with my hair where I grow it for a few years then chop it shot 😉 I also love routine, but need to switch things up all the time…it’s confusing, and I’m working on being mindful and present and at peace with the way things are in the moment…I’m a work in progress :)

    Gosh you’re such a millennial–heck we ALL are (and by “we” I mean every person I know). We love routine but when our routine becomes bland we crave change but after too much change we crave routine again. It’s kind of hilarious. Roasted veggies though? ALWAYS A GOOD THING.

    This all sounds so familiar! I work on being present and appreciating what I have, instead of wishing for things I don’t have or once had EVERY day… and it’s not always easy! So I definitely feel ya! On a separate note, these roasted veggies look awesome – and have me excited for fall!

    OMG this looks amazing!!! I love roast veggie bowls! Urgh, your blog post rings so true! I get bored so easily of practically everything (unless it involves fiance, being outdoors, travelling, adventuring, or food!) I always find that when I’m at work I want to be doing something else, but when I’m not working for long periods of time, all I want is to be able to work! I love routine, yet hate how I always have to have it! Let’s just say I haven’t found my true love for any kind of work (other than blogging yet) which is a little terrifying!

    It is soooo true though about your mindset. I wish I would have taken that more seriously at a younger age. But now I’m approaching 30 (YIKES) and I’m like “Oh yeah, I’m going to be more positive now” -__-

    Seriously love roasted veggies too and love all of the goodness going on in this bowl!
