It’s been a hectic first week back to work, and you know what that means… Scavenger hunt through the refrigerator most nights to put together something for dinner. Hence, the lack of shared recipes this week. However, last night I whipped up a Mexican-inspired feast, and am dying to share it with you.
Yesterday was spent soaking up the sun at Lido Key in Sarasota. The water was a perfect 83 degrees, and the waves were just choppy enough for some body surfing. We certainly worked up an appetite.
My family and I had been going back and forth between what to make for dinner. Should we grill some burgers? What about some fish? But for some reason, my heart was set on tacos. I mentioned tacos, my dad had mentioned shrimp… boom. Shrimp tacos.
This recipe is insanely easy. The only cooking you’ll have to do is sauteing the shrimp, and heating up the tortillas. The rest is just assembly. Let’s get into it.
