Gluten-Free White Chocolate Chip Peanut Butter Blondies

Hi all! I’m so happy to be here on The Blissful Balance sharing a recipe with you. For one, I heart Christina. She’s a lovely human being with such a great understanding of balanced living. We’re only a few years apart, but I wish I had her view on a balanced lifestyle when I was her age. Thankfully I’ve come to my senses over this past year and have allowed myself to actually live a little (perhaps that’s a story for another day on FMK…). But secondly, Christina’s drive, passion, and willingness to help others in the blogosphere is something that helps keep me going each week with my own blog.

 Gluten Free White Chocolate Chip Peanut Butter Blondies

When Christina asked if I would develop a gluten-free dessert for you all, my wheels started turning. I absolutely love baking, but I’m also a bit of a perfectionist, so whatever I came up with HAD to be AHmazing. Also, sometimes gluten-free baking can be tricky, so I went with a main ingredient I’ve used time and time again: almond meal. Almond meal is the perfect gluten-free ingredient for theses peanut butter blondies, which gives them a thick and chewy texture. Another key ingredient in blondies is brown sugar, which is crucial for the rich flavor you want from a blondie. Then of course there is peanut butter mixed with white chocolate because we’re fancy like that. Speaking of white chocolate, I like to use a higher quality one when baking. I’ve found that if I go the cheaper route, I’m left with chocolate chips that are waxy and won’t melt properly. I like Ghirardelli, but I hear Guittard is another great option.

Now, as much as you’re going to want to scarf these bad boys down fresh out of the oven (if you did, I wouldn’t blame you), you’re going to want to wait for the blondies to cool in the pan, for at LEAST 30 minutes, if not a full hour. The middle of the blondies will appear underdone when you first take them out of the oven, but they’ll set upon cooling.

 Okay, NOW you can devour.

Gluten-Free Peanut Butter White Chocolate Chip Blondies
Ingredients
  • 1 cup almond meal (almond flour will also work)
  • ¾ tsp baking powder
  • ¼ tsp salt
  • ½ cup all natural peanut butter (pure peanuts, no added oil)
  • ¾ cup brown sugar (light or dark)
  • 2 TBS butter, softened*
  • 2 TBS coconut oil, softened
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 4 oz quality white chocolate, roughly chopped (or ½ cup chips)
Instructions
  1. Preheat oven to 350F, line an 8×8 baking pan with parchment paper, set aside.
  2. In a small bowl combine almond meal, baking powder, and salt. Set aside.
  3. In a large bowl using an electric hand mixer, or the paddle attachment of your stand mixer, cream together peanut butter, brown sugar, butter, and coconut oil until well combined, about 1 minute.
  4. Add in egg and vanilla extract, mix until fully combined.
  5. Add your dry ingredients to your wet ingredients, and mix until dough comes together. Dough will be thick and slightly wet/oily.
  6. Using a large wooden spoon, stir in your white chocolate.
  7. Press dough into prepared baking pan, working it into the corners evenly with your hands.
  8. Bake for 20-25 minutes, until edges have browned slightly. The middle will appear underdone, but will set upon cooling. Cool blondies in pan for 30-60 minutes before cutting into 16 squares.
Notes
*Feel free to use all butter, or all coconut oil. If using all coconut oil, it is a good a idea to use a room temperature egg to ensure even mixing.[br]*Keep blondies in airtight container at room temperature up to five days fresh. You may also keep in fridge for longer.[br]*Blondies can be kept in freezer, wrapped tightly and stored in container, up to two months.
