Today is a special day.

Today is my only sisters birthday.

And we are celebrating with a giant cookie, also known as a cookie cake.

And in addition to this cookie cake, I thought I would share why my sister is special to me. Oh, and some funny stories along the way.

She is always thinking of others.

In the 24 years that I’ve known my sister, she has never once shown an ounce of selfishness. She is always thinking about how her words or actions will affect others, and her kind heart is unlike any other. Her generosity always amazes me, and I have always strived to be selfless just like her.

Except for that one time she smacked me in the head with her hair brush, and I got in trouble. You didn’t think I would leave that out, did you?

She is one of the most secure women I know.

I have never seen my sister display any sort of jealousy. When her friends succeed, she is genuinely happy. She has always been so supportive – no matter where she is in her life. Despite any obstacles she is overcoming in her life, if someone else shares exciting news with her, she lifts them up. 

When I was about two years old, my sister had her head slightly out of the car window while we were driving. I decided that I wanted to push buttons, and I closed the window on her head. Sorry!

She is ridiculously patient.

While I am the most impatient person I know, my sister is definitely the most patient. She will gladly help anyone in need, no matter how frustrating it may be if they aren’t understanding (hence why she was an elementary school teacher for three years). Her calmness is most unquestionably something to admire.

I have video proof that my sister was deathly afraid of Minnie Mouse when she was little. Like, screaming bloody murder at the sight of Minnie Mouse at Disney World. It’s great.

She’s always the best-dressed.

My sister has always loved fashion. She even works at Kate Spade, and is so good at what she does. She is always dressed to a T, and blows everyone else out of the water. Straight stylin’, always.

She is one classy betch.

I’ve always looked up to my sister for her maturity and classiness. She never conformed to the catty gossip that surrounded her in middle or high school. She always stayed true to herself and to what our mother taught us, and set a wonderful example for her younger sister (that’s me). 

No funny story here. Just look at how beautiful she was on her wedding day!

Now, back to this scrumptious cookie cake.

This cake contains no butter, no oil, and was made with almond flour, so it contains no gluten. Additionally, no dairy milk was harmed in the making of this recipe – almond milk FTW! The only dairy in the recipe is found in the chocolate chips, which can easily be exchanged for a dairy-free version.

It’s super moist and, although not as dense as a normal chocolate chip cookie, it baked as if it were a mix between cake and cookie. With something called a cookie cake, I’d say that’s pretty optimal.

To make this cake, I used a springform pan, which I found the best option for a cake that doesn’t rise much. The cake comes out very moist and stays that way, so the less flipping and pushing you have to do, the better. Of course, you can use whichever pan you prefer, I just like having a springform around for these instances.

Serves: 6 slices
Ingredients
  • 1 cup almond flour
  • 5 tbs brown sugar
  • 1/2 tsp baking powder
  • 2 shakes of salt
  • 1 egg
  • 2 egg whites
  • 1/2 cup creamy peanut butter
  • 1/4 cup vanilla Greek yogurt
  • 1 tsp vanilla extract
  • 1/4 cup almond milk
  • 3/4 cup chocolate chips
Instructions
  1. Preheat the oven to 350 degrees and grease a springform pan (or round cake pan).
  2. Combine the wet ingredients into a bowl (egg, egg whites, peanut butter, Greek yogurt, vanilla extract and milk). Using an electric mixer, mix on low until well-combined.
  3. Add in the flour, baking powder, salt, and brown sugar, and mix on low until well-combined.
  4. Add in the chocolate chips. Mix on low until completely folded in.
  5. Pour batter into pan.
  6. Optional: sprinkle more chocolate chips atop cake for a more appealing exterior after baking.
  7. Bake for 20 minutes or until a knife comes out of the center clean.

    Oh my goodness what a gorgeous-looking cake!! Peanut butter and chocolate are one of my favorite combinations EVER for a cake. I will definitely be making this! I love how simple the ingredient list is too, I’m pretty sure I already have all of the ingredients already.

    I had to pin this! It’s almost as beautiful as your sister! This whole post reminded me a lot of my sister Melissa who is 18 months older than me and all those things. She’s so smart, a saint, and insanely wise and selfless and I’m very lucky to live with her and her husband (yes, she’s a saint).

    My older brother was not quite as classy and mature growing up as your sister sounds, but I think he was focused on being the tough older brother. Luckily we’ve both matured and have grown into good friends and learned that having a sibling you are close to really just means you always have someone at family functions to give the knowing look to of, “Oh my God, our family is crazy.”

    This is so beautiful and I want to eat this right now haha. So sweet of you to right about your sister! I’m the oldest and have a sister who’s 2 years younger than me and after I left for college we got much closer. Even though I’m older I still look up to her for so many reasons. We both agree that our minds are switched and I actually act like the younger one :) haha.

My older brother is super smart, ambitious, and I always look up to all that he has accomplished in his career. My older sister recetnly went back to school to become a nurse, and I am so excited and proud of her for taking that step. And she always has the “F it” go-lucky attitude, that I strive to have but just can’t seem to grasp yet 😉

    I am the oldest sibling but I still look up to my sister in so my ways. She is such a hard working individual that has overcome so many obstacles in her life. She perseveres with grace and for that I am grateful. My sister is currently living with her boyfriend so she made the plunge before me, but it’s kind of nice having someone to talk about that with. She understands what it’s like to live with your significant other so I’m kind of learning the do’s and don’ts through her for whenever that day comes :)

    Such a beautiful post, chica. And this cookie cake…LIFE-CHANGING. I always thought that cookie cake was the bomb[dot]com when I was younger. When I finally got my license, I actually remember thinking how cool it was that I could go to the store and pick one up whenever I wanted. haha Love this GF version :)
