Not only is it Spring. Not only is it April. But, it’s banana bread season. Yes, I just made that up. But for real, this is the time when all of the banana bread gets baked. Your loaf pan is exhausted from all of the banana bread you’re making. You’re about two recipes away from being sick of bananas.

Okay, too far. But as I was thinking of what recipe to make and share, I thought – banana bread! Perfect. Everybody is searching for a banana bread recipe right now, amiright?

But, my mind quickly did a 180. “It’s a bit overdone”. At least, I don’t have confidence that I could make a unique enough version!

The process I go through when developing recipes is choosing a staple recipe as the base. For instance, when I thought of these cookies, I used cannoli as the ‘base’. Then, I smushed that thought into a cookie.

So, how can I make banana bread even better?

SCONES!

I have been wanting to make scones for the longest time, but I’ve been putting it off because I figured it was probably some long, annoying process, and I didn’t want to deal with it.

Wrong. So easy. Like, what the hell was I waiting for, easy.

The ingredients are simple. The baking time is a quick 10-12 minutes. The dough was anything but messy.

So basically, scones r bae.

Because this was my first time making scones, I adapted my recipe from How Sweet It Is. I just needed to know the essentials, then put my own twist to it.

My favorite part of my recipe is the addition of chopped, shelled walnuts. Traditional banana bread includes this ingredient, so I thought they would go perfectly with these scones (I was right). You get the firm outer layer, the moist center, the smooth chocolate chips and the crunchy walnuts, all in one bite. Additionally, instead of a glaze, I thought these would go perfect with some simple almond butter drizzled on top. Again, ya girl was right. You can swap almond butter for your favorite nut butter, of course.

Chocolate Chip Banana Bread Scones

Ingredients
  • 3 1/2 cup all-purpose flour
  • 1 tbsp + 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup brown sugar
  • 1/2 cup cold butter, chopped into pieces
  • 2/3 cup cashew milk
  • 2 ripe bananas, chopped or mashed
  • 2 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/3 cup chopped walnuts
Instructions
  1. Preheat your oven to 425 degrees and line a baking sheet with parchment paper.
  2. In a large bowl, combine flour, baking powder, baking soda, sugar, and salt. Use a stand or hand-held mixer.
  3. Add in butter and mix until the mixture becomes crumb-like, about 2-4 minutes.
  4. Create a well in the center of the dry mix. Add in the cashew milk, vanilla, and bananas. Mix until a dough forms.
  5. Add in the chocolate chips and walnuts. Mix until completely combined.
  6. Add flour to your working station (I used a marble baking board) and to your hands. Add ball of dough and flatten out to a circle (refer to photos in this post for example).
  7. Use a knife to cut 6-8 triangular pieces.
  8. Add to baking sheet – be sure to leave at least an inch of room between each piece.
  9. Bake for 10-12 minutes, or until the edges become golden brown.
  10. Serve with nut butter as topping.
Notes
If your dough feels too wet, add flour by the 1/4 cup full until dough is thick and you are able to form it.

    I love a good scone and these look so fluffy and they are like banana bread so they are totally a win! For some reason, every time I try to make a GF cinnamon roll recipe (I’ve tried 4 times) I’ve failed so I’m still on the search for a perfect GF cinnamon roll recipe!

    So much YUM!! Lately I’ve been intimidated by multiple layer cakes. First of all, I need more than one cake pan, but I’ve always been nervous about making the cakes and completely ruining them.     I thought the SAME thing when I made scones–so stupid easy! And I like that you turned the idea into scones.. banana bread is a bit overdone and scones are awesome and everyone needs to be making them every day 😀

    Mmmm those banana chunks I see!! Banana bread may be overdone but what ISN’T overdone these days. The interwebs is a bottomless pit, but meh. You done good with these scones and glad you finally took the scone plunge! I’ve got another scone batch coming early next week and they just make me so excited!     Scones are definitely something I never bake…I tried it once years ago and failed miserably…HA! And when I want a delicious and decadent breakfast treat, my go to is a big scone with lots of yummy butter or a homemade jam. It is the BEST!

    Best combos ever! So weirdly enough in Australia, what American call a ‘biscuit’ is actually a scone! Fun fact for the day! Anything doughy is always hard to make like bread or pizza dough! Looks like yu nailed it!

    For me, the idea of making macarons (the French kind, not the coconut kind) is a little overwhelming, but I would love to figure it out because they’re so expensive but I love them as a treat. It’s the delicate shell that makes me nervous!

    Oh YUM!! Gorgeous photos. I have never made scones, but they look too easy not to! I had been intimidated for the longest time at the thought of making homemade cinnamon buns. I recently made sticky buns and they were SO easy!! Probably not a good thing to find out, because now I want them allllll the time :-)

    I love banana bread any time of year! But I have been on a banana muffin kick lately and didn’t realize it. Maybe there is something ot your theory there! :) I have never made scones before either, but this does look pretty easy! I’ll have to try and tackle it.

    I'm too nervous to try making Italian style meringue…I still struggle with French style! I've also been putting off rolling my own sushi but I'm pretty sure I'll be able to once I try!

    Indulgent on the go breakfast? I did it this morning….rolled on to the train, dashed into the coffee shop opposite work and got a chocolate twist. Very rare for me to break my morning routine so badly!
