Guys, I’ll be the first to say it, these cookies ain’t pretty. I mean, really. Look at them. I had a real rough time trying to shoot them and make them glam for the blog. It just didn’t work out, sometimes you get an ugly duckling. I was pretty discouraged and wasn’t sure if I should share them. But I’m sharing them, oh yes I am. Because THEY ARE SO FREAKING GOOD. I made these nine cookies two days ago and they are gone. They are GONE.

I couldn’t not, people. They’re ooey, gooey, pumpkin-y, protein-y, sweet, smooth. All of the good adjectives.

AND, they contain about five grams of protein in each cookie, depending on what kind of protein powder you use. I use Quest Nutrition’s Vanilla Milkshake Protein Powder, which contains 22 grams per scoop. What kind do you prefer?

If I had to choose one dessert recipe to eat the rest of my life, I’d have to say cookies. Wait…

Yeah cookies.

There is just something about biting into a warm cookie with a crusty outside and moist, soft, inside. Oh my God I’m drooling. Just call me Cookie Monster, peeps.

And speaking of protein powder, it’s funny, to me, to think back when I had never even used protein powder. I remember scowling the internet trying to figure out which powder to buy. I started off with chocolate whey protein powder from Ultimate Nutrition, and let’s just say my stomach wasn’t too happy about it.

Since then, I tried a few plant-based powders that I just could not get on board with. Finally, I tried Quest Nutrition’s protein powder, and I love it. It’s my absolute favorite protein powder. Oddly enough, Quest protein bars make me feel crappy. But with Quest protein powder? I’m good! It’s bizarre, but I’ve got to say, it’s the best-tasting protein powder I can find.

These cookies are small-batch, and I made them in my toaster oven! I made them one night before plopping on the couch to watch The Real Housewives of Orange County. Yeah, that’s how I roll.

Pumpkin Spice Protein Cookies

 

Pumpkin Spice Protein Cookies

Serves: 9 cookies
Ingredients
  • 1/2 cup creamy peanut butter
  • 1/2 cup quick-cooking oats
  • 1/2 cup honey
  • 1/2 cup canned pumpkin
  • 2 scoops of vanilla protein powder
  • 1 tsp cinnamon
  • 1 tsp pumpkin spice
  • 1/2 tsp nutmeg
  • Optional:
  • Turbinado/raw sugar to taste
Instructions
  1. Preheat your oven/toaster oven to 350 degrees.
  2. Combine ingredients in a large bowl until well-mixed.
  3. Scoop onto a baking sheet about 1 1/2 inches apart.
  4. Sprinkle each cookie with raw sugar.
  5. Bake for 8-10 minutes or until a toothpick comes out clean from the center.

    You really nailed it with these cookies only taking 15 minutes to make! These are so easy a child could do them.

    That means that I can.

    I just have to gather the supplies like some canned pumpkin and pumpkin pie spice! I may try to make these this weekend..

    LOVE these cookies!! They’re packed with protein so it’s fine if they disappeared in 2 days 😉 I love Plant Fusion or Sunwarrior protein powder, would those work in this recipe? Oh man, if I could eat one dessert for the rest of my life it would probably be ice cream. Hands down. :)

    Gah! So excited for fall!! I thought I’d never say that! I’m not a huge fan of protein powders, only after work outs but I’m trying to eat more in pancakes/smoothies etc! Fav dessert – something chocolate, or cheesecake! Like a raspberry brownie cheesecake *drool*

    I might beg to kindly differ Christina, but these look BEAUTIFUL! :) <3 You have that God given gift to make anything beautiful, I think, and pumpkin is such a naturally beautiful color. I've actually been doing Try About Time Protein Powder, and it's SO GOOD! It's the creamiest I've ever had.
