I cannot begin to explain how excited/anxious I am for Halloween.

Why would I be anxious for Halloween?

Because for the last two or so years, I’ve done nothing for Halloween. I’ve been busy working or out-of-town or…whatever. It just hasn’t worked out. I’m anxious because I REALLY want to dress up this year. So, I’m basically nervously awaiting Halloween night, hoping I’m free as a bird and that somebody is hosting a party. You guys, I just want to dress up. That’s what it comes down to.

That’s right. This is happening. We’re going to be Harry and Lloyd from Dumb and Dumber. AND I’M SO FREAKIN’ EXCITED.

Okay, actually I don’t know if we are because the costumes cost, like, $80, and we both can’t imagine spending that much money on a Halloween costume BUT in my mind it’s going to happen. Stay tuned on Instagram to see if it actually does happen.

Can we talk about our favorite costumes? I remember, growing up, witnessing the funniest Halloween costumes while out trick-or-treating. I will never forget the girl that went as a TABLE in my neighborhood in Memphis. A TABLE. Literally, a table.

MY personal favorite, was when me, Christian, and his two roommates dressed as the Channel 4 News Team from Anchorman. I was Veronica Corningstone, Christian was Ron Burgundy, and his roommates were Brian Fantana and Champ Kind. We couldn’t find someone to go as Brick, so we joked that we’d lost him that night. Best. Night. Ever.

(He wasn’t actually smoking).

Halloween is one of the best holidays because 1) you get to dress up for one night and 2) candy. Just… candy. Do I really need to explain that one? I’ve never been hugely into fruity or sour candies; I’m more of a chocolate, peanut butter, almond, caramel type girl. And what’s better than combining THE flavor of Fall (pumpkin) with chocolate and almond? (Nothing. Nothing is better.)

These Pumpkin Almond Protein Cups are the epitome of Halloween candy. They’re the perfect little treat to give to your adult neighbors as a reward for kindly handling trick-or-treaters all night. Plus, they’re made with Barney Butter smooth almond butter. Doesn’t get much better than that.

Barney Butter uses only the best grades of California almonds, and blanches them to remove any phytic acid. I don’t know about you, but I totally feel better eating these homemade Pumpkin Almond Protein Cups with Barney Butter than most of the store-bought, processed chocolate candies.

What’s more is I’ve added protein to these bad boys (if you couldn’t tell by the title). Just a little boost of protein power to help keep your arm from collapsing after holding your bucket of candy. Lord knows those things get prettyyyy heavy by the end of the night.

Serves: Makes 12
Ingredients
  • First chocolate layer:
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil
  • Pumpkin filling:
  • ¼ cup Barney Butter Smooth Almond Butter
  • 1/2 cup canned pumpkin
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp coconut oil
  • ½ scoop vanilla protein powder
  • Chocolate shell:
  • 2 tbsp coconut oil, melted
  • 1 cups Semi-sweet chocolate chips
Instructions
  1. Line a mini muffin pan with mini muffin liners.
  2. Combine ingredients for first chocolate layer in a small bowl. Place in the microwave for 45 seconds. Remove and stir. Microwave in 15 second increments, stirring in between, until completely melted.
  3. Put 1 tsp of chocolate mixture into 20 mini muffin holes.
  4. Place in the freezer for 10-15 minutes.
  5. Next, add ingredients for pumpkin filling to a small bowl. Stir to combine.
  6. Remove muffin tins from the freezer.
  7. Add 1 tsp of pumpkin filling to each chocolate cup.
  8. Combine chocolate shell ingredients in a small bowl, minus the powdered sugar. Repeat step 2 to melt chocolate. When chocolate is melted, combine with powdered sugar.
  9. Add 1-2 tsp of chocolate shell on top of each pumpkin filling to cover completely.
  10. Place in the freezer for 10-15 minutes.
  11. Store in the freezer.

    Oh my gosh PLEASE take pictures of your Halloween costumes!! Those are fantastic!! My favorite Halloween costume was actually last year’s…my friends and I went as the Seven Deadly Sins and I was Gluttony. I got to wear a shirt that had junk food all over it and a cute skirt and put lollipops in my hair. So fun! Also, these almond butter cups are happening REAL SOON.

    You and Christian really pull off costumes so well. :) I love that they’re not creepy. I’m just not a fan of the creepy element of Halloween. 😀 But I don’t mind cool costumes and AMAZING candy, especially home made candy. I can imagine living in your house Christina; it would be so fun nomming on these treats. :)
