Pear and Prosciutto Flatbread

This Pear and Prosciutto Flatbread is ridiculously easy and ridiculously difficult to resist. Crunchy, sweet, salty, heaven.

Have you ever had a food epiphany? Like, you’re laying in bed, sound asleep, and you awake suddenly yelling “PEARS AND PROSCIUTTO! PEARS! AND! PROSCIUTTO!”

Okay, it didn’t really happen like that. It was more like, I was driving down the highway and I randomly thought about putting these two ingredients together. I swear, I get my best ideas when I’m either driving, in the shower, or running.

But seriously, knowing pears are in season in September, I knew I had to use them this month. Truth be told, however, pears go in phases for me. There are times where I will eat them everyday, and then times like now when I hardly eat them. As I was making this recipe, though, you bet I was stuffing pieces in my mouth in between prep… I mean… no I wasn’t….what

Yes I was.

Can we talk about that for a second, though? The whole “getting inspiration from going for a run” thing? I was watching this movie the other night, Stuck in Love. It’s a lame romantic “dramady”, but one part of the movie struck me. The father in the movie is an established author, and he has trained, for lack of a better word, his kids to be writers, too. His daughter is 19 and already having her first book published, while his son is still in high school and writing in his spare time.

The son is a homebody and relatively to himself. He smokes weed in his car, hangs out with the same kid all the time, and was too afraid to speak up to the girl he liked in class. There is a scene where the father has a talk with him, telling him, essentially, that he will not get any good writing out of being in the house all day. He told him that his ideas will come to him when he gets out and enjoys his youth, goes to parties, hangs out with friends, etc.

I felt like he was talking to me.

It’s sort of a strange transition when you enter post-college life. All of your friends are dispersed, you’re finding your way, getting into your career. You’re ridiculously busy, and it’s hard to stay in touch with everyone.

For me, I’m in a transition period where most of my friends in town live 45 minutes away from me, none of my friends from college live here, my boyfriend and I are long distance…yadda, yadda, yadda. I think many people go through this transition. But having something to focus on, okay, a million things, has certainly helped. I work a lot. To the point where I have to actively make myself go out and do things. Hey, I’m just grateful to not hate my life while working everyday like I once did. But, there comes a point where you have to stop and say: LIVE YO LIFE GURL. Just like that. You can only say it that way.

I related to this scene because I find that when I work 24/7, I begin to lack inspiration and creative juice. It’s when I actually step away and enjoy some fresh air and other human beings that I do my best work.

Stop and smell the pizza once in a while, would ya?

SPEAKING OF PIZZA HOLY AMAZEBALLS please try this pizza. Please. I will love you forever.

I am not even exaggerating when I say this, I had to give myself a pep talk to stop from eating the entire thing. “Christina. You have a meeting later where you’ll eat lunch. No need to eat the whole thing. Okay? Stop.”

Crunchy crust, sweet pears, smooth honey, salty prosciutto, melted cheese, Jesus take the wheel.

For the easiest pizza of your life, I recommend using a Baking Steel. You simply place your pizza on top of the Baking Steel, and bake it for 5-6 minutes and voila! Donezo.

Love these posts of yours. I SO agree! This summer has been a whole rut of creativity for me and it makes sense…not running, writing cover letters, minimal travel, etc. I’m feeling so much more inspired after just last weekend away. A change of scenery and routine does wonders.

Stopping to smell the pizza or the roses or the cookies is such a good way to just think about life, especially as you go through transition. I love how inspiration for recipes often comes out of driving, running, or just living. :)

Putting pears and prosciutto really sounds like a super yummy combo.
