I visited Georgie in Nantucket a couple of weeks ago and it was STUNNING. It was technically a business trip, but I was able to explore the town a bit, too! I couldn’t not share some photos with you guys. Come on. Look at this gorgeousness.

I wanted to include a little apology for being a bit more MIA on social media these days. There is just so much going on, I can hardly juggle what’s on my plate, let alone being consistent on social. Pancake Mini Muffins
These Pancake Mini Muffins are currently what is happening and I’m ridiculously excited about it. I feel like this is a bit of a strange concept, I mean I just kind of made it up out of thin air and they came out delicious so I’m sharing them with you all. Are they weird? I don’t care, they’re effing good.
These would be so cute to have in a little basket as an option at a breakfast/brunch buffet, or skewered in between fruit. Oh, and I dare you to dunk them in your coffee. LIFE = CHANGED.
- 1½ cups all-purpose flour
- 3 tsp baking powder
- 1¼ cups almond milk
- 1 egg
- 3 tbsp coconut oil
- Preheat your oven to 350 degrees and grease a mini muffin tin to 350 degrees.
- Add flour and baking powder to a large bowl. Mix together.
- Add in almond milk, egg, and coconut oil. Stir until smooth batter is formed.
- Using an ice cream scoop, add batter into each mini muffin tin about ¾ filled.
- Bake for 8 minutes.
- Enjoy dipped in maple syrup.
