When I visited Arizona, we had the opportunity to tour an olive oil mill, the Queen Creek Olive Mill, which I found totally interesting. So much so, that I took notes in my phone during our tour, because we learned so much about olive oil that I never knew. Here are a few facts…

There are three indicators of good olive oil.

During our tour, we were given a selection of little shots of olive oil so that we could go through the steps of tasting.

1. Bitterness: to taste the bitterness, let it roll down your tongue.

2. Pungency: to taste the pungency, let it slide down your throat.

3. Fruitiness: to test the fruitiness, smell it.

There are three profiles of olive oil.

1. Delicate

2. Balanced

3. Robust 

What makes olive oil ‘extra virgin’?

Extra virgin olive oil means that it is made purely of just olives. It is the oil that is extracted from the olive without the use of any heat or solvents. It needs to meet a number of chemical characteristics or variables to be considered extra virgin, and then it is required to go to a tasting panel to determine whether it meets those attributes.

At the olive mill, as I discussed in this post, we were treated to different kinds of olive oil cupcakes. The one I enjoyed the most was the lemon olive oil cupcake, hence the inspiration for this recipe!

I have made lemon olive oil cake in the past, but I wanted to do something different and spice it up.

Serves: 1 cake
Ingredients
  • 2 cups whole wheat flour
  • 1 1/2 cups sugar
  • Zest of 1 lemon (~2 tbsp)
  • Zest of 1 orange (~2 tbsp)
  • 2/3 cup extra virgin olive oil
  • 3 eggs, beaten
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup almond milk
  • Powdered sugar for sifting atop the cake
Instructions
  1. Preheat the oven to 350 degrees.
  2. Combine the dry ingredients in a bowl or stand mixer. Stir to combine.
  3. Add in the zest, eggs, almond milk and olive oil. Use the mixer to combine and form batter.
  4. Use olive oil or olive oil spray to grease a bundt pan. Pour in batter and spread evenly.
  5. Place in the oven and bake for 30-35 minutes.
  6. When finished, remove and let cool for about ten minutes. Sift powdered sugar on top to serve.

    Oh yes this sounds AMAZING. Bundt cakes are just too pretty. Love the addition of olive oil for baked goods.
    Gosh I am honestly not sure if I can pinpoint a weird food combo that I love…. I could put avocado on anything literally. So that could possibly be it 😉

    Bundt cakes are my FAVORITE. I think it has to do with the fact that there’s so much surface area touching the pan, which creates an unbelievably moist (sorry) and delicious cake! Lemon olive oil sounds like a winning combo, girl!

    I’m so obsessed with olive oil–if you look, I use it in nearly every savory recipe I post. I have been seeing it used in baked goods lately though, and that’s something I have yet to attempt. This sounds so, so good!

      I use it every single day pretty much. And when we were at the mill we were given a few skincare products that they make/sell there and it’s amazing how good it is for your skin. I use olive oil chapstick every day it’s so good!

    I love olive oil. One of my favorite things to do is go to my local farmer’s market and try all the flavored olive oils they have. This cake looks so good and I especially love the addition of the fresh zest…YUM!

    Wow, so I guess that EVOO is the best choice! I love that olive oil makes a really healthy and MOIST, dense cake. Bundt cake was the perfect idea for incorporating olive oil.

    How interesting! I didn’t even know an olive oil mill was a thing! I have yet to bake with olive oil, but I LOVE the combo with lemon. This cake looks scrumptious!

    Looks so delicious. When I was little I was just the BIGGEST fan of the Corner Bakery mini bundts -if you’ve never tried them, they’re super crusty. But THIS looks like it would be so moist due to the olive oil.

    I’ve ALWAYS wanted to know what the difference was between olive oil and extra virgin oil! Now that you wrote it out though, I realized that it made total sense. Duh lol. Any way, I’m not sure I’ve ever baked EVOO in a cake, but from what you’ve mentioned, it seems like I need to give it a shot! Especially with this cake- I love the flavor profile, Christina! :)

    I’ve never tried putting olive oil in a cake, and it sounds like an interesting flavor. One of my favorite factories is the Taza chocolate factory in Boston. There are so many samples, and it’s really cool to try hand ground chocolate.
