Lemon Cake Pops

These lemon cake pops are chewy and moist covered in sweet, hardened white chocolate. Serve them as a dessert snack at your New Year’s party!

Okay, I have to admit… the last couple years I have spent my New Year’s Eve at home, watching one of the numerous New Year’s tv specials, champagne in-hand. God, that sounds depressing…but really, going out on New Year’s is not my cup of tea. My family has actually had a few parties at our house, which I really enjoy. I just don’t see the point in going out, being in a ridiculously crowded bar, paying $50 just to get in, and celebrating the New Year doing exactly what I can do at home for less money, and with the people that really matter.

Okay, rant over. But the point is, you can have your very own shindig that’s just as good as an over-priced downtown bar. All you need is:

Good friends and family
An awesome playlist
Booze
Flashy outfits 
‘2016’ party paraphernalia 
Lemon cake pops

The inspiration behind these cake pops is The Great Gatsby, which happens to also be a fun theme for a New Year’s party! In the story, Nick served Daisy and Gatsby lemon cakes and tea when he lured her to meet Gatsby.

A few notes to remember when making this recipe:

  • Melt your chocolate in a deep bowl, not a big, shallow one. This will make it easier and cleaner to envelope your cake pops in chocolate. I noticed this tip in Becky’s post (which inspired this version) and I listened to her – she was right! 
  • Make sure to place the baked cake in the refrigerator overnight.
  • Also, once the balls are formed, leave them in the refrigerator for about an hour.
  • This recipe calls for 4 bags of chocolate chips because the process of coating the balls in chocolate takes a bit, and the chocolate begins to harden when you begin to reach the bottom. You’ll need to start over with the chocolate 3-4 times, so over-buying by one or two bags is worth it! This sounds like a pain, but it really wasn’t – I promise!

    I couldn’t have said it better myself about not being big on New Years! I’ve been out in downtown Nashville one too many times on the occasion where I can’t move enough to even get a drink. Lemon is my favorite flavor of all times! I had the perception that cake pops were pretty difficult, but this recipe looks very doable and adorable!

    I’ve never tried making cake pops, but they sound way easier than I thought! I totally agree with you on the New Year’s thing though. I’d much rather enjoy the holiday from my couch in some sweatpants. One of my good friends has her birthday on New Year’s so the past few years our plans have been a mix of celebrating the upcoming year with birthday cake and presents thrown in the mix.

    I LOVE cake!!! I enjoy going to friends houses for parties, but it is fun to host your own, because then you never have to worry about getting home…HA! You just put on your PJ’s and walk right into the bedroom.

    I love cake pops! I’m so thankful for this past year, and I can’t wait to see what God has for this year ahead. He is a good Heavenly Father, and I can’t wait to follow His plans for my life this year. It’s a little scary, but exciting at the same time.

    Giiirl these are the cutest. Yeah I’ve never been into crazy new years parties. Whenever I do get hyped it never meets my expectations so I just like being low key and going with the flow. the last couple years I’ve been traveling anyway so it doesn’t make much difference. These pops though, wouldn’t mind having a couple to bring with me.

    The past few years we’ve stayed at a friend’s house or gone downtown for a few drinks. None of that fancy schmancy $90 NYE celebration at the hottest clubs. I do like to get dressed up, though :)

    I’m obsessed with lemon everything- these seriously look SO GOOD! I’m with you on New Years Eve- I’ve done the whole drop $500 to go out to some fancy event and it just never lives up to the hype. I much prefer staying in and just having a few friends over.

    I LOVE THESE! So purrtty. And YES I can totally relate to staying in over going out. It seriously feels like such a waste. I actually grew up spending most of my New Year’s Eves at my Canadian bestie’s house with our families. They threw the BEST parties and everyone in their neighborhood would stop by. So many good memories (some I may or may not remember…) :-p
