This refreshing Kiwi Cocktail is the perfect drink to enjoy in celebration of St. Patrick’s Day!
It’s almost St. Patrick’s day, and you know what that means…
Yes, alcohol. BUT, it also means that the first day of Spring is three days later (3/20)! And THAT means florals, fruits and BEACH!
Well, at least for me. Spring is one of my favorite seasons (not that there are that many to choose from here in Florida) because it just makes me think of fresh ingredients, a sunny, blue sky, and the sand between my toes. As I am typing this, I’ve got my space heater (yeah… I’m a wimp) blowing in this room, and the day dreaming has commenced.

This cocktail is super easy to make. Because, seriously, I’m not the best mixologist. So if I’m making a cocktail, you know it’s simple.
And to be honest, I’m not really sure if this can be classified as a cocktail, as the only alcohol content it contains is white wine. What actually constitutes a cocktail?
Okay… let me look this up.
“an alcoholic drink consisting of a spirit or several spirits mixed with other ingredients, such as fruit juice, lemonade, or cream”.
Welp, *PLOT TWIST* I just changed the definition. This is a cocktail because I said so.
Muddling the kiwi and mint before mixing the drink creates a ridiculously good burst of flavor. Also, this combo allows you to use less simple syrup, which is always good!
I see all of these St. Patrick’s Day drink recipes floating around with the tackiest, fake green color. In an effort to use natural coloring and avoid yucky food coloring, this is what I came up with. And I am very pleased with the result. I love that gorgeous kiwi color!
- 1/2 cup Pinot Grigio
- 1 kiwi, cut into little chunks
- ~6 mint leaves
- 1/8 cup simple syrup
- 1/4 cup club soda
- *Garnish: sliced kiwi and mint leaves
- Add the kiwi chunks and mint leaves to a cocktail shaker. Muddle until the kiwi is soft and the mint leaves are broken up.
- Add in the wine and simple syrup. Shake the mixer until well-combined.
- Add mixture into a large measuring cup. Add in the club soda and stir well.
- Pour into two cocktail glasses and garnish with kiwi and mint.
- Enjoy!

I can’t with the fake green coloring–this looks SO GOOD. I’m a fairly new kiwi fan, and I’ve never had it in cocktail form–obvi that needs to change. Oh and I’d love to know what the temp was when you were using that space heater 😉 Everyone else (me) is jealous of Florida weather!!

YUM! I would absolutely classify this as a cocktail and in fact I admitted on my blog today that fancy cocktails are my guilty pleasure right now… so obviously I’m swooning over this. Kiwi is one of my favorite fruits for both the taste and the texture and I can’t believe more speak easy type bars don’t use it for some of their drinks.

I love the pretty green color! Adding food color to recipes seems so odd to me. Processed foods are already so filled with dyes, and I really don’t see why we should consume more.
