Butternut Squash Bruschetta

Serves: 9 pieces
  • ½ butternut squash, finely chopped
  • 2 tbsp extra virgin olive oil
  • ½ tsp salt
  • ½ tsp cinnamon
  • ⅓ cup pine nuts
  • 1 tbsp fresh sage, finely chopped
  • ½ cup ricotta cheese
  • 1 baguette, sliced
  • Optional:
  • Honey
  1. Preheat your oven to 400 degrees.
  2. Place squash on a baking sheet and spread around. Drizzle with 2 tbsp extra virgin olive oil, salt, and cinnamon.
  3. Place in the oven and bake for 10 minutes, or until soft.
  4. When butternut squash is finished baking, remove and set aside. Replace baking sheet with sliced baguette. Place in the oven and toast for about 3-5 minutes.
  5. Spread ricotta evenly on all slices of baguette. Top with squash, pine nuts, sage, and honey.
