Lo Mein Salad with Almond Butter Dressing

Serves: Serves 6
  • 8 oz lo mein noodles
  • 1 cup shredded purple cabbage
  • 1 cup matchstick carrots
  • 1 cup shelled frozen edamame, steamed
  • ¼ cup sliced scallions
  • Dressing:
  • 2 tbsp Barney Butter smooth almond butter
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp honey
  • ½ tsp ground ginger
  • Optional toppings:
  • Fresh cilantro
  • Sesame seeds
  • Crunchy chow mein noodles
  1. Cook lo mein according to package directions.
  2. Combine cabbage, carrots, edamame, and scallions in a large bowl and mix together.
  3. While noodles are cooking, combine almond butter, soy sauce, sesame oil, honey, ground ginger in a liquid measuring cup and whisk together with a fork.
  4. When noodles are finished, drain them.
  5. Place noodles atop salad ingredients and mix together with tongs.
  6. Pour dressing over salad and mix well.
  7. Top with preferred toppings and enjoy!
