Serves: 32 mini muffins
  • 1½ cups all-purpose flour
  • 3 tsp baking powder
  • 1¼ cups almond milk
  • 1 egg
  • 3 tbsp coconut oil
  1. Preheat your oven to 350 degrees and grease a mini muffin tin to 350 degrees.
  2. Add flour and baking powder to a large bowl. Mix together.
  3. Add in almond milk, egg, and coconut oil. Stir until smooth batter is formed.
  4. Using an ice cream scoop, add batter into each mini muffin tin about ¾ filled.
  5. Bake for 8 minutes.
  6. Enjoy dipped in maple syrup.
