Berry Cheesecake Popsicles

Serves: 12 popsicles
  • 8 oz low-fat or non-fat cream cheese
  • 1 tsp vanilla extract
  • ¼ cup coconut oil
  • ½ cup powdered sugar
  • ¼ cup blueberries
  • ¼ cup rasperries
  • 2 graham crackers, crushed into crumbs
  1. Combine cream cheese, vanilla extract, coconut oil, and powdered sugar in blender. Puree until smooth.
  2. Add graham cracker crumbs and berries evenly into each mold.
  3. Pour popsicle 'batter' into each mold until it just about reaches the top. Leave a little room for the sticks to fit without overflowing.
  4. Add in sticks and place in the freezer for 4-6 hours.
  5. Depending on what type of mold you have - run mold one-by-one under warm water to remove plastic case from popsicles.
12 popsicle count is based on each double popsicle broken in half.
