Berry Cheesecake Popsicles

Serves: 12 popsicles
- 8 oz low-fat or non-fat cream cheese
- 1 tsp vanilla extract
- ¼ cup coconut oil
- ½ cup powdered sugar
- ¼ cup blueberries
- ¼ cup rasperries
- 2 graham crackers, crushed into crumbs
- Combine cream cheese, vanilla extract, coconut oil, and powdered sugar in blender. Puree until smooth.
- Add graham cracker crumbs and berries evenly into each mold.
- Pour popsicle 'batter' into each mold until it just about reaches the top. Leave a little room for the sticks to fit without overflowing.
- Add in sticks and place in the freezer for 4-6 hours.
- Depending on what type of mold you have - run mold one-by-one under warm water to remove plastic case from popsicles.
12 popsicle count is based on each double popsicle broken in half.
