Roasted Cauliflower with Basil Avocado Sauce

  • Cauliflower:
  • 1 head cauliflower, cut into florets
  • 2 tbsp extra virgin olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • Sauce:
  • 1 ripe avocado
  • ½ fresh basil leaves
  • ¼ cup Parmesan cheese
  • ½ cup extra virgin olive oil
  • 1 tsp kosher salt
  • ½ tsp pepper
  1. Preheat your oven to 425 degrees and prepare a baking sheet by either greasing it, covering with foil (and greasing), or parchment paper.
  2. Lay cauliflower florets across sheet and drizzle with olive oil, salt, and pepper.
  3. Place in the oven for 20-25 minutes.
  4. Flip, then bake for another 10-15 minutes.
  5. For the sauce, add the avocado, basil, olive oil, Parmesan, salt, and pepper into a food processor. Process until completely smooth.
  6. Remove cauliflower from oven and move to a large bowl. Either mix the sauce in with the cauliflower (and serve immediately), or leave sauce for individual dipping.
Be sure to wait until just before serving to make the avocado sauce, or else it will turn brown (due to the avocados).
Do not heat up with the cauliflower - it will make the cauliflower soggy.
