St. Patrick's Kiwi Cocktail

Serves: 2 glasses
  • ½ cup Pinot Grigio
  • 1 kiwi, cut into little chunks
  • ~6 mint leaves
  • ⅛ cup simple syrup
  • ¼ cup club soda
  • *Garnish: sliced kiwi and mint leaves
  1. Add the kiwi chunks and mint leaves to a cocktail shaker. Muddle until the kiwi is soft and the mint leaves are broken up.
  2. Add in the wine and simple syrup. Shake the mixer until well-combined.
  3. Add mixture into a large measuring cup. Add in the club soda and stir well.
  4. Pour into two cocktail glasses and garnish with kiwi and mint.
  5. Enjoy!
DO NOT add club soda to the cocktail mixer! It will explode!
