Gingerbread Baked Oatmeal
 
 
Ingredients
  • 2 cups oats (whichever cute you prefer)
  • 1½ cup almond milk
  • 1 tsp vanilla extract
  • 1 egg
  • 2 tbsp brown sugar (or coconut sugar, refined sugar, your choice)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp pumpkin pie spice
  • 1 tsp ground ginger
Instructions
  1. Preheat the oven to 375 and grease a small baking dish. I used 7x9 dish.
  2. Add ingredients to a mixing bowl and stir to combine.
  3. Bake for 30-40 minutes. Check after 30 minutes - insert a knife into the oatmeal. If it comes out clean, it is finished.
  4. Enjoy sprinkled with cinnamon and sprinkles, because WHY NOT!
