Mahi Tacos with Sweet Red Onions

Even though Summer doesn’t officially begin until exactly one month from today, here is a flavorful, fresh, easy Summer recipe to whip up whenever. You can swap whichever fish you prefer, but I do recommend mahi – it’s delicious and affordable!Fast and Fresh Mahi Tacos

Mahi Tacos with Sweet Red Onions
Ingredients
  • 1/2 red onion, sliced
  • Red wine vinegar
  • Rice vinegar
  • 1 tbs sugar
  • 2 cloves garlic, sliced
  • 2 mahi fillets (I used frozen – ’twas on sale)
  • Cilantro, roughly chopped
  • 1 1/2 avocado, sliced
  • Corn tortillas
  • 1 lime or lime juice
  • Salt and pepper
Instructions
  1. In a glass jar or casserole dish, place red onion and pour in a mixture of red wine vinegar and rice vinegar until onions are covered. Add garlic, sugar, salt and pepper (to taste). Cover and refrigerate. I kept it refrigerated for about two hours, but you can leave it for a minimum of thirty minutes.
  2. Season fish fillets with salt and pepper and place in a Ziploc. Add lime juice and about 1/2 cup of cilantro. Mix well in the bag and let marinate in the fridge for about an hour.
  3. Once you are ready to cook, chop up some more cilantro and slice your avocado so it will be ready to add to your tacos. Fish takes no time to cook, so you want everything to be ready.
  4. You’ll need 3 saute pans: one for the fish, one for the tortillas, and one for the onions. Heat olive oil at medium heat in two of the pans; in one add the onions, and in the other add the fish. Cook each for about ten minutes (flipping the fish over). You’ll know if the mahi is ready if you can flake it with a fork, while the onions are ready when they are almost translucent.
  5. Meanwhile, place however many tortillas you prefer on one pan on medium heat. Heat tortillas until they start to brown and bubble.
  6. In the fish pan, when finished, turn off the heat and break into chunks with a fork to make serving easier.
  7. To serve, add fish, onions (sans garlic), avocado and top with more cilantro and lime juice if you prefer.
