Dark Chocolate S’mores Cookies

Ever since I made these Nutella s’mores, I’ve been wanting to make s’mores again, in a different fashion. Sometimes I get these recipe ideas in my head, and I just know that it’s going to work. So when it doesn’t, ya girl gets pissed.

Let’s just say the first round of these puppies did not go so well. They came out like rocks, you couldn’t taste the marshmallows, there wasn’t enough chocolate, I screwed up the baking ratios… the whole nine. But I was so determined to make the vision in my head come to fruition.

To make the s’mores vibe a little stronger, I decided to place the marshmallows on top of each cookie, rather than roasting them and stirring them into the batter (which was ridiculously messy, I advise you to avoid that).

Plus, you get a wonderful toasted look to them, and the marshmallow flavor is allll there, right when you take a bite.

I was so determined to get these right, that I immediately re-made them after my first flop. Usually I’m too pooped to try again, so I wait a day or two. But this time, my head was like NO. THESE ARE HAPPENING.

And they did! By the way, the first round actually tasted fine. And I almost hate that even more than when it’s a complete and utter fail. Because now you’ve got something that really, actually tastes good, but it’s either ugly, or a bad texture, or just simply not good enough. But by the same token, I’ve gotten the flavor down, it’s now just a matter of texture (and a few other things).

The reason I like sharing these stories of temporary failure with you all (temporary because all you have to do is try again), is because I really am a big advocate of being fearless in the kitchen. Everybody fails in the kitchen. So long as you keep going, that’s all that matters. How else are you going to improve?

Additionally, as far as food blogging goes, I encourage all bloggers out there to never share anything that they aren’t 100% in love with. I’m guilty of this. In my beginning stages of blogging, I thought “eh, it’s fine”, when it was a recipe I wasn’t over-the-moon happy with. And it wasn’t until I started to only share recipes I was completely satisfied with, and excited to share, that my blog began to grow. So, if you fail – try again.

Dark Chocolate Chunk S’mores Cookies

Serves: 12 cookies
Ingredients
  • 1/2 cup margarine (or 1 stick butter), softened
  • 1/2 cup brown sugar
  • 1/2 cup applesauce
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/2 cups whole wheat flour
  • 3/4 tsp baking soda
  • 1/2 cup graham cracker crumbs
  • 1 tsp salt
  • 1 cup dark chocolate chunks
  • 1/2 cup marshmallows
Instructions
  1. Preheat the oven to 375 degrees and prepare a cookie sheet.
  2. In a stand mixer (or large bowl, mix by hand), add the margarine, brown sugar, applesauce, eggs, and vanilla. Mix well on low speed.
  3. While mixing, add in the flour in batches.
  4. Add in the baking soda, graham cracker crumbs, and salt. Mix until well-combined.
  5. Fold in the chocolate chunks. Mix well.
  6. Using a spoon or ice cream scooper, scoop ~1 1/2 inch scoops onto the baking sheet, each at least 1 inch apart.
  7. Top each cookie with about 3 marshmallows before baking.
  8. Place in the middle rack of the oven and bake for 12-15 minutes.
Notes
If your marshmallows don’t look as ‘toasty’ as you’d like, put your cookies under the broiler on high for about 1-2 minutes.[br]For dark chocolate chunks, I chopped up a dark chocolate bar. You can use chocolate chips or whatever you prefer.

    OH MY GOSH I can’t even handle how amazing these cookies look! That dough though…;) I’ve never been camping before either and I never did Girl Scouts lol! But my biggest kitchen fail was the first time I ever tried to make a cream cheese frosting when I was 10. I had everything in the bowl including the powdered sugar and started the hand mixer….but I forgot to hold the bowl. Powdered sugar EVERYWHERE! Let’s just say our kitchen looked like it was being searched for cocaine hahaha

    Definitely not a fan of camping, but I am a fan of s’mores! I went camping when I lived in Colorado and I didn’t like it at all…I felt dirty, tired, and sleeping on the hard ground in a tent is not appealing to me. Hey at least I tried it! :)

    omg that picture of the batter is killing me right now. i just want to stick my tongue in there (sorry, not sorry). I’m going to a backyard BBQ/fire tonight and someone is bringing smores ingredients. i kind of just want to bring these and not deal with the mess haha.

    I used to be that way with recipes too on my blog. I’d share some thing just “OK” so I would get a post up, not realizing it wasn’t the best way to approach it.

    My biggest fail? My gluten and dairy free vanilla cupcake recipe which I am STILL tinkering with!

    And I’ve had so many kitchen fails… It’s almost embarrassing. I’ve burnt so many things, made cookies that turned out flat as pancakes, attempted to make gluten free pancakes that turned into crumbles, and well I’m not going to bore you, but seriously, I’m so glad that you retried and retried these because that’s an amazing example to me + they look amazing.

    YUM! :) Summer definitely makes me think of s’mores! We backcountry camped for half of our honeymoon…so yeah we LOVE it! :) You get to spend time in the most beautiful, untouched places in the world when you hike deep into the heart of the wilderness! I highly recommend giving it a whirl…no bathrooms to clean either! 😉

    On their own, marshmallows do nothing for me. But when they’re all warm and gooey (a la s’mores), yessss please. These cookies look incredible, Christina!
    And I’m no stranger to kitchen fails. I just tried a peanut butter-coconut flour cookie with all the wrong ratios. They were like peanut butter sponges. Oh, well. You win some, you lose some – and you learn a lot along the way :)

      No I totally agree. I would snag one while I was baking and every time I ate one I was like I don’t know why I keep eating these because they are almost flavorless lol it’s like the heat brings out all the flavor!

    Omg I LOVE s’mores! And maybe it is just the extra effort of building your own fire, but to me, s’mores on a camping trip always turn out to be the best. And in Girl Scouts you got to stay in cabins?! My Girl Scout troop made us set up our own tents LOL. Our troop leaders definitely emphasized the “real” camping experience. I would love to try these cookies and see if they would still work with flax eggs as a replacement :) They look AMAZING!!

    I too have only been cabin camping as a Girl Scout. I am hoping to go camping soon. I may try Glamping first though.

    I love s’mores and when I saw this recipe I got soooooo excited. I cannot wait to try these so thank you for persisting after the first failed batch.
