I have such fond memories of game days in The Swamp (and all of the tailgating festivities that precede it). Let me tell you about my favorite parts.

Number one: when the Gators enter the stadium. Man, this gives me chills every single time I’m at a game.

And number two: GAME DAY FOOD.

It’s the (usually indulgent), comfort food that graces the foldable tables at the countless tailgates across campus underneath the orange and blue tents.

If you’ve never experienced a college game day in the South, you haven’t lived.

Okay, that’s an exaggeration, but really… it’s unlike any other sporting event! So much pride, so much passion, so much history.

And this is all what this Crockpot Lasagna Soup reminds me of. Well… for part of the football season. The beginning of the season at Florida is standing in the stadium, shoulder to shoulder in the student section, sweating your ass off. But toward the end, during the Autumn months, it gets really nice and sometimes chilly/cold. That’s when this Crockpot Lasagna Soup would make an appearance.

Even for game days at home – throw all of the ingredients into the Crockpot and let it do it’s thing. Then, when it’s game time, everybody enjoys a bowl while they watch their favorite team play!

So, why is this called Crockpot Lasagna Stew? Well, it’s thicker than a soup, and it encompasses the flavors of lasagna in one big pot. If you choose to, you can use lasagna sheets instead of elbow pasta, but I chose to use this type of pasta just for preference.

Crockpot Lasagna Stew

Ingredients
  • 5 links Italian sausage, casing removed
  • 24oz jar of tomato basil marinara sauce
  • 2 cloves garlic, minced
  • 32oz beef broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2-3 cups elbow pasta
  • 1 cup water
  • Shredded mozzarella cheese
Instructions
  1. Place first 6 ingredients into a Crockpot and stir together.
  2. Set Crockpot to low and cook for 7-8 hours.
  3. minutes before you’re ready to eat, add in the elbow pasta and water. Cook on high for about thirty minutes or until pasta is al dente.
  4. Enjoy topped with mozzarella cheese.

    Comfort food at its finest! LOVE this recipe! All I need is a crockpot…I know, I’m late to the obsession…;) I love eating hot foods on game day too, especially if there’s some sort of hot dip involved. With ALL the chips!

    OH WOW Christina, this looks absolutely amazing; game days in the South sound amazing. Maybe some day I can come visit you for a game day; the way you describe it would be so fun. I don’t normally like watching sports, but for some reason, this sounds really fun. And this would be such a perfect option for dinner. I love our crockpot so much, and my family always likes noodles and cheese and beef. :)

    I love lasagna soup! It’s a meal I could never really wrap my head around as a kid (“Ummm lasagna and soup are two totally different things, Mom…”), but it tastes so unbelievably good! I adore that you made a crockpot version – I bet it makes the house smell fabulous.
