This recipe right here is bringing back some memories. If you didn’t enjoy Rice Krispie Treats as a kid, I feel bad for you. Actually, I don’t, because NOW you can enjoy them! And, they’re a bit healthier because #adults.

My mom is the queen of Rice Krispie Treats. I KNOW, I KNOW – pretty much every Rice Krispie Treat recipe is the same (except this one ;)), but my mom always found some way to make them amazing. Literally, as a child, my friends would ask me all the time when my mom was going to make more ‘Rice Krispies’.

These are among many foods that remind me of my childhood. Like a song, or a smell, a taste is definitely up there on the brings-back-a-flood-of-memories scale.

As you may have noticed, these Rice Krispie Treats were made with coconut oil. In what way, you ask? (Or, I ask myself because you’re just reading this and probably not talking to your computer screen) Well, I replaced the butter with coconut oil. WUTTTT, yes. This is happening, it’s a thing, it is real, and delicious.

Some of you may know (especially if you read this) that I can’t eat butter 99% of the time. Every time I order scrambled eggs for breakfast at a restaurant, and ask for them not to be cooked in butter, I have to explain how sick I will become if they cook them in butter because if they think I’m just “trying to be healthy”,  I assume they will ignore my request. (News flash: they most of the time still ignore it. Let’s just say I’m now the only one that orders granola or a bagel when out to breakfast).

So yes, long story short, my life consists of me constantly thinking of different ways I can replace butter. Coconut oil coming into my life was a damn blessing. Funny thing is, I avoided it for so long because I am not a fan of coconut, truthfully. I can stomach it sometimes, depending on what it’s in (it’s more of a texture thing for me, I think), but for the most part, the taste reminds me of how sunscreen smells. Is that weird?

With all of this said, can I just tell you that these are Papa TBB approved? Not only did my dad approve of them, but I swear to you, he said “these are the best Rice Krispie Treats I have ever had”. YASSSS, DAD.

Adding coconut oil made these silkier and smoother. They still have all of the texture components you know and love about Rice Krispie Treats, but have that added silk to them.

Coconut Oil Rice Krispie Treats

Cook time:
Total time:
Serves: 16 squares
Ingredients
  • 7 tbs coconut oil, melted and at room temperature
  • 1 bag marshmallows (small, not large!)
  • 5 cups rice puff cereal (I used store brand ‘Rice Krispies’)
Instructions
  1. In a sauce pot over medium heat, add coconut oil and marshmallows.
  2. Stir combination until marshmallows are completely melted.
  3. Add cereal to a large bowl.
  4. Pour marshmallow and coconut mixture over cereal and stir together until completely combined.
  5. Pour mixture into an 8×8 baking dish and press down (you might need to use your hands).
  6. Place in the refrigerator for at least an hour.
  7. Cut into squares and enjoy!

    Well I for one am a huuuuge coconut oil fan–taste, texture smell—so I can only imagine how good these taste. oh and speaking of restaurants ignoring your request…my brother is vegan and he recently went out to eat and asked the server if a certain dish was vegan and she said yes except the dish actually came with sausage in it? I forget what it was (I wasn’t there, he just told me about it) but I was like FAIL FAIL FAIL.

      Hahah wow that’s a new one. Yeah I always feel like they think I’m just trying to be ‘skinny’ or ‘healthy’ so I get real obnoxious and I like have to go into this whole story about my stomach so that they really understand and it fails every time lol wompwomp

    That’s so freustrating that they don’t listen or take you seriously, but I believe it because when I ask for anything special to be done, it RARELY is. #thestruggle
    But talking about coconut oil instead of butter..cook your eggs at home with it! SO GOOD. Adds just a little sweetness that’s delicious!

    Honestly, I think making rice krispie treats with coconut oil will make them a million times more amazing!!! I love that swoon-worthy buttery coco-nutty flavor that coconut oil lends, it enhances any dish. And question, does anyone else eat the rice krispie right out of the the pot? Or better yet, just the melted marshmallow and oil? It’s seriously the best thing on earth, I can’t make rice krispies without sneaking a spoon (or two 😉 ).

    These totally take me back to my childhood. Every birthday party always had rice krispie treats. Normally they were chocolate ones.
    Another thing that reminds me of childhood are iced animal biscuits. Do you get those in the US?

    I totally never thought to substitute coconut oil for butter–that’s a great swap! I definitely also went through a phase where I didn’t like coconut–not sure why, but the taste was associated with something that made me nauseous. Thankfully I’m over that phase! 😀

      That’s how I’ve always been and I’m finally branching out, first with coconut oil. But it’s the texture of coconut flakes that makes me nauseous! I’m just not there yet, maybe one day!

    That’s sad that people don’t listen to you when you ask for no butter. Sometimes, I think it’s because we (I don’t have as many allergies) need to look at it from the other person’s perspective, and that will give us more compassion. Having a lot of family members and friends who have restrictions has really helped me to be more compassionate about these things.

    And the smell that reminds me of my childhood? Probably chocolate chip cookies!

      I just think the restaurant biz is so crazy and hectic that they get annoyed with people that ask for any changes which I can understand but it’s tough at the same time!! It makes me so sick that I have just given up haha. Oh well! Thanks for reading Emily! <3
