Cauliflower Crust Personal Pizza

When I was younger and somebody asked me what my favorite food was, I always said pizza. Either pizza or peanut butter. But mostly pizza.

Nowadays, I do still love it, but I rarely ever eat it. Besides the fact that I’m not really supposed to be eating greasy foods due to my digestive issues, it’s just plain not good for you and it’s one of those foods I cannot have just one slice of.

That’s why I’m sharing an alternative with you.

Believe me, I don’t think anything can completely replace the crispy, cheesy goodness of pizza. But for someone who can’t completely quench their craving, someone trying to lose weight, or someone who just really likes vegetables, this is a great alternative.

This was a lot easier than I had expected it to be. Fun fact: a couple years ago I attempted to make cauliflower crust pizza, and it went haywire. I accidentally used wax paper instead of parchment paper in the oven, the recipe just did not work, and I ended up at Chipotle.

This time, everything went smoothly, and it was delicious. Even my dad liked it and he knew it was cauliflower. Usually if I give him something to try that I’ve made, he enjoys it until I tell him the brownies he just ate were made from black beans. Then he gags.

Please excuse these photos… I kind of made this on a whim because I was craving pizza and happened to have cauliflower in the fridge. It tastes a lot better than these photos lead on.

    Pizza rocks but I’m always super picky if I’m going to have any. It has to be supah fresh. My favorite is really thin crust traditional Italian style with tons of fresh sauce and garlic.

    This looks so good! Sometimes it’s nice to have just cheese or just bread versus the whole deal. Cauliflower crust is really yummy – it’s no bread, but it’s a nice veggie delivery system in its own right.

    Also your pics look great!

    This looks so good! I’ve been meaning to try cauliflower pizza for a while now! I like how this is a “personal pizza” because it’s the perfect size! Is the crust better in the oven (for extra crunch) or a dehydrator? I’ve seen it both ways so I’m torn! Love your pictures too :)

      Hi Nastasia! Thanks for the comment! I have never tried making it with a dehydrator so you’ll have to experiment!! 😛 I’m sure it’s tasty either way!

    Love cauliflower crust! And love that this is a personal size. In this version, do you need to ring out the liquid from the riced cauliflower before mixing it with the other ingredients?
