As some of you may know, Christian (boyfriend) and I have been long distance for two years now. Being in different stages of life can always take a toll on a relationship; it’s been anything but easy. But the love we have for each other is unlike anything either of us has experienced. What has helped us get through the distance and the struggles has been picturing our future together. Being grateful for grocery trips and movie nights in that we rarely get to experience now.

Thankfully, the distance between us the past couple of years hasn’t been that far. Driving from my house to where he is and vice versa takes about an hour and 45 minutes. However, his graduate school program kept him insanely busy. And me, well, you’ve heard me whine about my schedule before. Just because we’re relatively close doesn’t mean we see each other all of the time. Our “routine” has been 1-2 times a month (which is still much, much better than some people!).

What I haven’t really discussed is a time where we were apart for a few months. At that time, I was in Pensacola for my internship, and Christian was in Gainesville. The distance was about a five hour drive. We saw each other twice during that time. We’ve been through a lot, beyond the distance, but this was really tough. I was depressed where I was, and not having anyone around me that I could lean on, and especially not having Christian, was difficult. BUT, I got through it, we got through it, and looking back I think about the times that we were able to spend together.

This bowl was inspired by a time when Christian visited me in Pensacola.

We were texting one day (as we did 24/7), and although he had been really short with his responses for quite a while that day, I didn’t think anything of it. The next thing I know, I’m in my pajamas watching tv in my house and I get a text from him telling me to go outside. If I remember correctly, he told me to look at the moon. And I said something like, “I saw it earlier”, or something along those lines, because I was probably too comfortable to get up. I then received a photo from him via text – he had taken a photo of the house I was in. I immediately jumped up, ran outside, and there he was standing in my front yard.

That was the greatest surprise I’ve ever gotten.

I remember that Saturday we spent the day exploring Pensacola. We ate breakfast at Another Broken Egg, and I ordered a breakfast quinoa with yogurt and berries.

Not only was this an amazing day because Christian was visiting me, but this was also the first time I’d eaten quinoa for breakfast!

If you’ve never tried breakfast quinoa, I urge you to go for it. It’s such a versatile ingredient and I love manipulating it for different meals and recipes. This quinoa was cooked in almond milk, which the quinoa beautifully absorbed giving it a slight almond flavor. I added a dash of vanilla extract and some blueberries, which cooked so nicely with the mixture. The heat pulled the flavors of the blueberries out and enveloped the quinoa with their juices.

Blueberry Quinoa Breakfast Bowls

Serves: 2 bowls
Ingredients
  • 1 cup quinoa
  • 2 cups almond milk
  • 1/2 cup blueberries
  • 1 tsp vanilla extract
  • 1 cup vanilla Greek yogurt
  • Toppings:
  • 1/4 cup blueberries
  • 1/4 cup granola
  • 1/4 peach, sliced (or chopped)
  • 1 tsp honey
Instructions
  1. Place the quinoa, almond milk, vanilla extract, and blueberries into a rice cooker and set to cook.
  2. When the quinoa is finished cooking, turn off your rice cooker and let it cool for about ten minutes.
  3. Serve your bowls with your dollop of yogurt, topped with your quinoa and various toppings. Drizzle with honey and enjoy with a hot cup of coffee!
Notes
If you don’t have a rice cooker, place the ingredients into a sauce pan and cook on medium-low for about 20-30 minutes or until quinoa absorbs all of the liquid.

    Ugh totally tearing up reading this. Jared (my sweet bf) and I did the distance for the first 8 months of our relationship. We had about the same separation time as you guys, an hour and 45. Just long enough to make it difficult, but close enough that we both felt compelled to make the drive almost every weekend to be together. It is SO hard, especially when you’re so close and that person is your biggest supporter. Stay strong sista, better days are coming, We moved in together in January (something I never thought I’d do lol) and I can honestly say it gets better and happy times are ahead for y’all! It’s those quiet breakfasts and trips tp the grocery store that make you feel normal, I’m so glad you are able to get that time with him!

      Every weekend that’s amazing. That just hasn’t been possible for us and it’s so much harder than I ever thought it’d be but I know it will all be amazing once we are back together like you said. Love this story thank you for sharing!! <3

    Such a sweet post! I’ve never been in a long-distance relationship but I have eaten at Another Broken Egg (in Charleston) and had a similar breakfast! This looks absolutely delicious and your photos are so, so beautiful.

    Yep yep yep MUST try this! I’m all about those carby breakfasts right now while I’m nursing. Long distance SUCKS. My hubs was deployed for a year in Afghanistan and I was miserable. Even if it’s a few hours drive or across the world, never fun :(

    Ooh, this looks delicious!

    My husband and I were long-distance for a few years. We started dating my second/his fourth year of uni, so we had two summers when I was back in Canada and he was over here in the UK, and then two years after he graduated when we were about an hour and a half apart. In some ways, the summer holidays were easier because even though we didn’t see each other at all for months, there was a definitive end date when I’d fly back over and stay with him for several days before going up to uni, rather than the constant fleeting weekend visits we got during the school year. It could be hard, yes, but it was so worth it. We’ve been living together five years now and I’ve never looked back 😀

    I REALLY admire you guys for staying strong while long-distance. Before I moved to where we’re living now, Ray and I did the LD thing for a measly 12 months before I was like noooooooo-I-can’t. GAH. :)
    I’ve seen breakfast quinoa bowls but have been skeptical about trying. This recipe has me mooooore likely to try it!! Thanks!

    Peaches and blueberries have to be my favorite fruit combo. Haven’t tried them with quinoa yet, but this looks amazing!

    During the summer my husband’s work takes him all over the state so we’re often apart for weeks at a time but those little surprise visits are the absolute best! It’s tough, but totally worth it.

      That’s how my mom and dad were (now retired), but my dad was allllwaaays traveling growing up. My mom always tells me about when they first got married and had to move for his job – they moved, and then she was alone all the time because he had to travel to move up the corporate ladder! But back then, no cell phones or blogging ;D I would be a mess ha! Love makes it worth it :)

    Oooh girl I totally feel you, long distance is tough but I’ve found it to be worth it. My boyfriend and are are “semi” long distance as I like to think of it, he lives a little over an hour away. We just celebrated our 5 year anniversary and have been semi long distance the whole time minus 1 summer. While it’s not a perfect situation to be in for 5 years, we’ve both worked hard to make it work. It is what it is, and as I’m sure you know it’s worth the inconvenience.
