Right now I’m sitting on the couch, criss-cross applesauce, and I have Transformers on in the background. Thinking back to when this movie first came out nine years ago (holy crap), I remember having a huge crush on Shia Labeouf. However, he was still Louis Stevens to me (yet I didn’t have a crush on him when he played Louis Stevens) – it was weird seeing him in an action movie, having grown up being used to him farting and being an idiot on Even Stevens.

So, while I’m watching (half-watching) Transformers, instead of really watching and absorbing, I’m thinking about Shia Labeouf, then Even Stevens, and now all of the shows I used to love as a kid.

If there are any 90’s kids reading this, let’s take a trip back in time… these were my favorite shows growing up (90s/early 2000s):

Something else that reminds me of my childhood… popsicles.

They remind me of summers at the beach in Miami. Pool days at my grandma’s house. Popsicle juice dripping down my face as a kid. Beach hair, sand all over my feet. The good ole days!

These popsicles are a little different than your usual popsicles, though, because cheesecake. I am a huuuge fan of cheesecake, and it was so fun to make it in popsicle form. Oh, and these popsicles were so ridiculously easy! You simply put the ingredients into a blender, puree, pour, and freeze.

If you don’t have a popsicle mold, fear not – I got this one at Bed, Bath, and Beyond for $10. Super cheap, and I love them because they have a little drip-proof thingy on the top of each stick. You can see it better in the photo below.

These are great to have on-hand whenever you want to make popsicles (because, again, so freaking easy!!). Something I want to do, and probably will soon, is making boozy popsicles. Maybe I’ll pour some sangria into these molds… BRB doing that.

Berry Cheesecake Popsicles

Berry Cheesecake Popsicles
Recipe Type: dessert

Serves: 12 popsicles
Ingredients
  • 8 oz low-fat or non-fat cream cheese
  • 1 tsp vanilla extract
  • 1/4 cup coconut oil
  • 1/2 cup powdered sugar
  • 1/4 cup blueberries
  • 1/4 cup rasperries
  • 2 graham crackers, crushed into crumbs
Instructions
  1. Combine cream cheese, vanilla extract, coconut oil, and powdered sugar in blender. Puree until smooth.
  2. Add graham cracker crumbs and berries evenly into each mold.
  3. Pour popsicle ‘batter’ into each mold until it just about reaches the top. Leave a little room for the sticks to fit without overflowing.
  4. Add in sticks and place in the freezer for 4-6 hours.
  5. Depending on what type of mold you have – run mold one-by-one under warm water to remove plastic case from popsicles.
Notes
12 popsicle count is based on each double popsicle broken in half.

    These look so patriotic and delicious!! Must try! My favorite TV shows growing up were The Powerpuff Girls, Big Comfy Couch, and Scooby-Doo. I also was obsessed with anything Disney, I still have all of the videos! :)

    OK! I could never, ever get over Shai Labeouf playing a serious character. I was so distracted during transformers I couldn’t even stand it. He will always be Louis to me! Also, I’m pretty sure the thing that got my dad the most excited about my pregnancies is that it gave him license to say, “Hey fatty…give me your pizza!” (Thank you Boy Meets World)! These popsicles look awesome, and the perfect treat for the 4th of July!!! My favorite thing about the summer was (and still is) the pool! :)

      It was so weird to see him be serious I know! And look at him now lol he’s gone a little coocoo. Gosh I miss Boy Meets World!! Now they have “Girl Meets World” on Disney which I refuse to watch haha #nonewfriends

      I LOVED ARTHUR I was just talking to my mom about this yesterday! I remember we would have these long Summer pool days and then we’d shower and sit in the “kids room” and watch Arthur until dinner time. Such good memories!

    I love recounting child hood memories. My favorite memories are probably making mud pies and playing make believe in the back yard. <3 Sigh… Love memories. :) And these pops? The idea of eating a cheesecake in a popsicle sounds amazing-sauce to me!

    I’m seriously drooling over these popsicles. When I was back in high school, I spent most of my summers at math camps…yes, math camps. Summers are actually a lot more chill now that I’m interning, and I don’t have to spend so much time cooped up solving math problems.

      Hey, math camps are all good because look at you NOW!! You are killin it! :) I spent some summers in summer school, and sometimes I took art classes. Other than that growing up in FL there were a lot of beach and pool days! :)

    I loved That’s so Raven and Lizzie McGuire so much. I wanna rewatch them but I’m sure they wouldn’t be nearly as funny now I’m a bit older.

    oh my godddddd these popsicles!! And these photos, lawdy gorgeous.

    Man Nickelodeon and Disney Channel were my everything. And all the of Disney Channel original movies!? Ugh I miss them… I wonder if they’re on Netflix. I could go for some Johnny Tsunami right about now…
