In a few days I’m heading out of town to Nantucket to visit Georgie! I would be lying if I said I wasn’t nervous…

Confession: traveling alone always stresses me out. Truthfully, I’m still a newbie! I traveled (airplane travel) on my own for the first time in January of this year. This is shocking to most people, but I’ve never had a reason to travel on my own until then. I’ve always just gone on family vacations. So, the very first time I traveled on my own was for my press trip to Arizona with Visit Mesa.

And of course, I learned plenty of lessons on that trip… You know, like don’t switch purses the night before your trip to get a few snacks at Target then forget to put your wallet back in the purse you’re bringing on the trip. Oh, and I learned what it feels like to have a majorly delayed flight and get home at 4:00AM when I was supposed to get home at 10:00PM. Also, my parents dropped me off that morning, and I remember ordering some coffee at Starbucks before heading to my gate. I put a little sugar in my coffee, then turned around to walk back to my parents. I hadn’t even noticed, but my mom grabbed my phone while I’d left it sitting on the coffee bar. I got plenty of “talking-to’s” that morning. Like, when my dad dropped an f-bomb in front of everyone around us as soon as he realized I’d left my wallet at home (we live 45 minutes from the airport, and my flight was leaving in an hour. After that trip, I traveled to NYC in March on my own to meet up with Georgie. Talk about travel anxiety… I’ve been to New York three times, but never by myself. Basically, the unknown makes me super anxious. I am so embarrassed to admit all of this, so stop laughing, you! Everything turned out fine with this trip, and I was thanking God after being traumatized from my first solo trip. #dramatic

I feel more comfortable now, but the anxiety still looms. I think 90% of my travel anxiety stems from the unknown of airports. ‘I don’t know how long the lines will be’, ‘I’ve never been to this airport what if I get lost and miss my flight’… you know, the typical not-so-rational thoughts that run through my mind. To ease my mind, I just go through each scenario and tell myself that with each one, everything would be fine either way.

Now that I’ve exposed my embarrassing travel anxieties, let’s talk about something that I have zero anxiety about: ALMOND BUTTER MASCARPONE GRILLED CHEESE.

Do you know what’s amazing about this particular grilled cheese? Its’ versatility. You can eat it for breakfast, for lunch, or for dessert. I mean, technically you can do that with any food because you run your life, but you know what I mean. This thing does not discriminate.

The combination of buttery bread (or for me, margarine-y), creamy, sweet mascarpone, and salty almond butter is unlike any other. Oh, and I made another variation for you chocoholics – I added some Nutella because WHY NOT. WHY. NOT.

This is a great option that I know kids would love. When I was a kid, I absolutely loved grilled cheeses. On top of that, I loved peanut butter with a passion. At that age, however, I didn’t know that there were any other types of nut butter beyond peanut butter. I just didn’t know it was a thing, because I was a kid, and all I knew were my times tables. However, as I’ve grown, I’ve been exposed to a world of nut butters. *a whole neewwww wooooorrld*

Funny enough, I came to love almond butter that one time I gave Whole30 the ole college try. Whole30 prohibits peanut butter, so I completely replaced it with almond butter. I felt like I was cheating (because, I kinda was) but I didn’t care – almond butter all day, errday. This was when I initially discovered Barney Butter almond butter. Barney Butter is great because it’s a total farm-to-jar process, and it’s a wonderful option for anyone allergic to peanuts because their almond butter is made in a 100% peanut-free facility.

Almond Butter Mascarpone Grilled Cheese
Prep time:
Cook time:
Total time:
Serves: 2 sandwiches
Ingredients
  • 4 slices cinnamon raisin bread
  • 2 tbsp Barney Butter Smooth almond butter
  • 2 tsp Nutella
  • 2 tbsp mascarpone
  • 4 tsp margarine (or butter)
Instructions
  1. Spread almond butter on two of the slices of bread.
  2. Spread each tsp in the middle atop almond butter.
  3. Spread mascarpone evenly on the other two slices of bread.
  4. Close sandwiches and spread butter/margarine on one side of the sandwich.
  5. Heat a skillet over medium heat.
  6. When skillet is hot, add sandwich butter side down.
  7. While sandwich is cooking, butter the side that is not cooking.
  8. Flip after about 3 minutes of cooking or until golden brown-dark brown.
  9. Cook other side.
  10. Slice and enjoy!
Notes
You could try coconut oil instead of butter or margarine!

    Talk about the perfect sandwich!! OMG this looks incredible. Pinned! :) I’m just the opposite, though. I really like traveling alone, especially flying! The first time I ever flew alone was when I was 16. I feel like traveling alone has given me really good experiences in dealing with others and airline stuff and just being on my own. One thing I can’t travel without is definitely my headphones. Music keeps me sane!

    I actually prefer traveling alone because everyone else’s slowness stress me out haha. Plus I have TSA pre (just the best thing ever) and can choose my own seat upfront without needing to save a bunch (Southwest probs). Over the last 5 years I’ve traveled more alone than with family! I’m convinced that Barney Butter is the best for cooking/baking. It melts so easily!

    I LOVE dessert style grilled cheeses–like you said, perfect for dinner or dessert. I travel solo every year when I meet Miguel in Puerto Rico, and I’ve found that if I’m confused, particularly when I’m not sure if I’m at the right baggage claim, that asking other travelers/tourists definitely helps and makes me realize that no one knows what the eff is going on most of the time.

    I used to get so nervous travelling on my own when I first started doing it in high school, but after the first few trips I got so used to it and now I am more comfortable travelling on my own than with a group. It is so much easier for me to get myself through security and on the plane, rather than with a group where something always seems to go wrong. I remember the first time I traveled alone and I was so scared, but the more you do it the more you get comfortable with it and soon enough it will seem like a breeze!

    This looks so fantastic! It’s also one of the most creative takes on grilled cheese I’ve ever seen! 😀 And girlfriend, you are NOT alone in being a nervous traveler! I took my first flight alone less than two years ago and still always have to get to the airport at least three hours before my flight leaves, or else I’ll collapse into a nervous wreck worrying that I won’t have enough time to do everything. It’s very silly.

    Have fun on your trip–I’m sure everything will go just fine, and you have a wonderful friend waiting for you when you get there! :)

    This looks like absolute heaven. I have never flown anywhere by myself but I have bussed and that was stressful enough.
    I think half of the reason I get so anxious is because my Dad puts all these terrifying scenarios in my head of what could go wrong. Then I end up being all twitchy and paranoid the whole time.

    WOWWW!!! This is AMAZING, and you know what? I get nervous when traveling by myself too, and I have to keep praying, knowing that it’s all in God’s hands, and He will work it out. He always does work it out for my good, and it’s amazing how it seems like the anxiety usually doesn’t really help me. O_O I’ve had so many crazy travel experiences. I could go on for hours.

    You’ve probably had a lot of opportunities to travel alone? That would be pretty different to hop on a plane and travel to NYC, because NYC is such a HUGE city. You’re pretty brave Christina! :)

    Also, wow, again, this looks like a dessert? Now I want to go eat this for breakfast, lunch and dinner.

    This sandwich! YES. The first time I had a dessert/sweet grilled cheese, it was brie and dark chocolate, and I thought it was crazy until I took a bite. As a nut butter lover forever, this sounds like an excellent twist.
    And I love traveling by myself, but I’ve had to do it a decent bit since I went to faraway camps and I go to college a quick plane ride away. It feels disorienting at first, but it gets easier. :)

    Woah woah woah, this recipe blows my mind! Now I have a good reason to buy cinnamon raisin bread! 😉 traveling gives me anxiety too, especially security. I’m a basketcase basically. What makes me feel better is always getting to the airport on time and coffee. The coffee makes me chill out and enjoy something which helps distract me. I’ve gotten better over the years, but I still get irrational thoughts from time to time. I will always drive somewhere before flying!
