I’m going to confess something right now, but you can’t tell anyone.

I’ve never liked fruit mixed with dessert.

OKAY STOP YELLING. Maybe just apples, actually. Here’s what I mean… it’s more of a texture thing, I think. I seriously cannot stomach cooked apples. Like in apple pie. It’s making me nauseous right now thinking about it – they get all… soggy. Blegh. But there is one fruit that I actually, really enjoy with dessert, and that’s the incredible edible strawberry.

I honestly cannot explain it to you right now, but they just work. Their texture does not change much when cooked, and their flavor is only amplified. Some fruits, to me, become sour when cooked. For me, the flavor of strawberries is still wonderful after baking. And the simplicity of this dish, thanks to the sweet, refreshing flavor of strawberries, is unlike any other. Tart strawberries combined with smooth, sweet honey and tangy orange zest, nestled in a crispy pie crust. There’s nothing better.

A few quick notes about this recipe:

  • I only made six cups using one premade Pillsbury pie crust; if you want to fill an entire muffin tin, I suggest using two. And if you want to top each little pie with another layer of pie crust, use the third crust. I created three different styles of pies so you can see a couple more options for decorating.
  • I went through an entire pie crust testing out the size of which I needed to make the bottom layers. First I tried a cup, then I tried a mason jar, and then I tried a mini bowl. Mini bowl for the win! The size of the circles needs to exceed the size of the muffin wells so that the cups actually form… cups.
  • If you’re wanting to make each pie cup a mini pie with a cover (see below for example), I recommend using your finger and lining the edge of the pie crust with water before placing the top layer on, so that it sticks together. Additionally, you can use a fork to pierce the edges so it sticks better.

These 5-Ingredient Mini Strawberry Pie Cups are the perfect, easy, light Summer sweet snack or dessert. Utilize those fresh strawberries and whip these up in under 30 minutes!
Ingredients
  • 10 strawberries, chopped into little pieces
  • 1 tbsp honey
  • 1 tsp fresh orange zest
  • 1 Pillsbury pie crust
  • 1 egg
Instructions
  1. Preheat the oven to 375 and grease a muffin tin.
  2. Roll out a pie crust using a rolling pin. Be sure to flour your work surface, your rolling pin, and the crust.
  3. Using a small bowl, cut out cups from the crust and press into the muffin tin. This recipe calls for six cups (1 pie crust).
  4. Combine the chopped strawberries, honey, and orange zest in a small bowl and mix well.
  5. Whisk one egg until scrambled. Using your finger, spread egg wash on the edges of each pie cup.
  6. Spoon strawberry mixture into each cup until each cup is evenly filled.
  7. Place in the oven for 15 minutes, or until crust is golden brown and crispy.

    I love these! I’m such a chocolate person so I never reached for the cherry pie or apple cobbler, but I actually have always loved the fruit desserts made of berries. So strawberries have always been alright with me, especially in such a quick and easy way!

    I am so not a fan of sushi…I know that isn’t a particular food, but people always look at me weird when I say I don’t like it. As far as summer treats, I love everything with strawberries and blueberries…YUMMY blueberry pie with vanilla ice cream…Get in my belly…XOXO

    I’m kind of weird about my fruit as well – I can’t stand cold fruit! I have to have it more room temperature, but in my head that’s it’s totally natural state! Maybe I’m just a weirdo though 😛

      Haha too funny, I’m the same way with CERTAIN fruits. I cannot stand a cold banana! BLEGH. I love a cold apple, cold strawberries hurt my teeth (I am so weird) and I have to have my grapes cold!

    This will probably sound odd since I used them in my last recipe but I cannot stand chia seeds (unless they’re ground/blended). I make an exception for a few things, including jams/marmalades, but I hate the ooey gooey texture of chia pudding (unless it’s blended) and don’t get me started on trying to get the seeds out of my teeth. Now I’m gagging lol.
    p.s. this looks freaking amazing, and I’m gonna have to find a dairy-free pie crust so I can make them 😀

    Yum! Can’t go wrong with strawberries and pastry :)
    I’m not a fan of mint in dessert… I would rather not have mint choc chip or after eights! I could eat it if I had to. What I can’t stomach is cucumber and people find that very odd and tell me it doesn’t taste of anything. Yes, it does. and I can smell it from the other side of the house!

        Ooh I’m impressed you can eat it if its hidden! I start gagging if I get a whiff of it :( I wish I liked it because it sounds refreshing, also it sneaks in everywhere… salads, sandwiches, garnishes

    Bananas!!! Absolutely hate them, unless they are cooked in something like banana bread or disguised in a smoothie! I wish I like them, but just can’t! I feel like I’m missing out though because everyone always posts so many amazing pics of banana with PB or almond butter! Love strawberries, love the look of this dessert!

    but i love fruity desserts, especially apples! usually not strawberries though, hah. but i do love how simple this is 😀 besides strawberry pie, which I dont like), i havent really cooked with them. but i recently saw someone roast them on IG, and like this, that sounds sooo good!

    anyways, i actually love the texture of cooked apples, hah. but i also dislike coconut. actually hate. also…. hate avocado. you can yell at me now :(

    I do LOVE strawberries, and I kind of get what you mean about cooked fruit. It is definitely not my favorite thing, because….. chocolate :-) but strawberries I enjoy any which way. These look too cute and I would gobble up the entire pan. And probably enjoy with ice cream…

    One of my old roommates really disliked any sort of fruit dessert, unless it was banana bread, haha. I know what you mean, even though I LOOOOOOVE all fruit desserts! Bring on the squishy apples…hehe sorry, sorry!!
